Mexican Shrimp Cocktail
Tastes just like the one you order from your favorite Mexican restaurant! This shrimp cocktail is a tasty mix of all the best flavors–cilantro, lime and shrimp. Serve with tortilla chips and enjoy!

- Total Time: 15 minutes
- Yield: 6
- 1 pound shrimp, cooked, peeled, tail-off
- 3 cups fresh tomatoes, finely diced with their juices
- 1 medium cucumber, finely diced
- 1/2 jalapeno, seeded and minced
- 3 limes, freshly squeezed
- 1/2 cup ketchup
- 2 generous dashes hot sauce
- 1/2 cup cilantro
- 1/2 small white onion, diced
- 2 avocado, pitted, peeled and diced
- Salt to taste
- 1/2 cup Bloody Mary mix (optional)
- 1 bag white corn tortilla chips
Cut half of the shrimp into small pieces. Place in a large bowl with remaining whole shrimp. Add tomatoes, cucumber, jalapeno, lime juice, ketchup, hot sauce, cilantro. If desired, cover and refrigerate until ready to serve. Gently stir in avocado. Salt to taste.
If a thinner consistency is desired, add Bloody Mary mix.
Serve with tortilla chips and enjoy!
