Mediterranean CousCous Salad

Designed to fit the Good Cook Square Meals Salad Set, keep each of the ingredients fresh until you’re ready to toss this tasty salad together.


  • 3 cups baby spinach
  • 3/4 cup Israeli couscous, quinoa or acini de pepe pasta, cooked and cooled
  • 1/4 cup kalamata olives
  • 1/2 cup tomatoes, diced
  • 1/2 cup cucumbers, diced
  • 1/4 cup crumbled feta
  • 4 large leaves fresh basil
  • 2 Tbsp olive oil
  • 2 Tbsp white balsamic vinegar
  • 1 clove garlic
  • 2 teaspoons honey
  • Salt and pepper, to taste


In the Good Cook Square Meals Salad Set, toss together spinach, couscous and olives. Arrange tomatoes, cucumbers and feta in their own sections on the top piece of the set. In a blender or mini food processor, puree basil, olive oil, vinegar, garlic and honey together. Salt and pepper to taste. Pour into the dressing section in the salad set. Secure plastic lid over dressing. Assemble salad together. Refrigerate until ready to serve. To serve, toss all ingredients together. Drizzle with dressing and enjoy!
