If you’re looking for a delicious weeknight healthy comforting recipe, then these meal prep turkey taco bowls are going to hit the spot.

I just love the fall season with all its comforting hearty foods that warm the soul.  I absolutely love combining comforting with convenience, and nothing is easier than being able to pull a pre-prepped meal right out of the refrigerator and into the microwave for a quick delicious meal.   

Our go-to meals in our house are always either cheeseburgers, chop steaks or tacos.  While those can get a little boring, I thought it would be fun to take tacos and make them into big healthy taco bowls with all the ingredients that my wife and daughter love.  One of my favorite things about making taco bowls is that you can sort of accessorize them up to your families liking.

In addition to being able to customize each of these turkey taco bowls, you have to start with a base and add on from there.  Since we will be making these into meal prep taco bowls, I’ve got some staple ingredients to begin with.   For any taco bowl, I always start with rice, protein and some sort of vegetables, whether that’s peppers and onions or salsa.  Since I want this recipe to work all year round and tomatoes are in peak season in the summer, I suggest just using your favorite salsa from the store to put into this recipe.

Turkey Taco Bowl Prep

You start these taco bowls by cooking your rice in a medium-size pot and keeping it warm.  However, you can kill 2 birds with 1 stone and begin cooking your peppers and onions while your rice is also cooking.  Be sure that you get a light caramelization on your peppers and onions, as this will further the flavor of your taco bowls.

Set the cooked peppers and onions to the side and then using that same GoodCook 13.5” saute pan add in the ground turkey meat.  Whether you are cooking ground beef or ground turkey, it’s always in a big chunk that needs to be broken up.  I’m not even kidding when I say this, but the GoodCook Meat Chopper may be my favorite tool of all time.  It has a 3 blade design perfect for separating up ground beef or turkey into those smaller bite-size pieces and can scoop and transfer ingredients.  It is everything you’ve been looking for when cooking ground meat.

Meal Prep Turkey Taco Bowls

Yields 6 bowls     adjust servings

Ingredients

  • 2 cups long grain rice
  • 4 cups water + 3/4 cup
  • 2 tablespoons olive oil
  • 1 each seeded and julienne red and yellow bell pepper
  • 1 peeled and julienne red onion
  • 2 pounds ground turkey meat
  • zest and juice of 1 lime
  • 2 teaspoons each chili powder and cumin
  • 2 cups black beans
  • 2 cups corn kernels
  • 1 cup shredded coby jack cheese
  • optional shredded green leaf lettuce and salsa
  • chopped cilantro and lime wedges for garnish
  • salt and pepper to taste

Instructions

Add the rice and 4 cups of water to a medium-size GoodCook saucepot and bring to a boil. Once boiling, place a lid on and turn to low heat and simmer for 15 minutes.
Remove from the heat and let stand for 5 minutes before removing the lid and breaking up the rice with a fork.
In the GoodCook 13.5 sauté pan over high heat, add in the olive oil and caramelize the peppers and onions until they are lightly browned, about 3-4 minutes. Season with salt and pepper and set aside.
Place the sauté pan back over high heat and add in the ground turkey. Using the GoodCook meat chopper, break up the ground turkey into small bite-size pieces.
Add in lime zest, lime juice, chili powder, cumin, salt and pepper and cook until the turkey has no pink in it. Add in the ¾ cup of water and cook until it has been absorbed into the meat, about 2 minutes.
Meal Prep Bowls: Evenly add the cooked ground turkey to 1 of the smaller compartments amongst the 6 GoodCook meal prep bowls. In the other smaller compartment evenly add in the beans, corn and cheese. In the large compartment add in the rice and roasted peppers and onions. Add an optional garnish of cilantro and lime wedges.
If you were eating this right away, feel free to serve with the shredded lettuce and salsa.
