Mango Avocado Salsa

Sweet from mango, spicy from jalapeno, savory from red onion, and crunchy from red pepper. The colors are magnificent and make anything you eat it with look gorgeous and bright.


  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (fresh or thawed from frozen)
  • ½ red pepper, diced
  • 1 ripe mango, diced
  • ¼ cup cilantro, finely chopped


In a medium bowl, toss avocados with lime juice, salt, and jalapenos. Add black beans, corn, red pepper, mango, and cilantro. Stir gently to combine. Check for seasoning and add more salt if needed. Serve with chips or on grilled chicken or fish.
