This recipe starts with cooking the lasagna noodles and preparing the filling as the noodles cook. Lasagna Rolls with Fresh Basil

Serves 5     adjust servings


Ingredients

  • 10 lasagna noodles
  • 1 tablespoon olive oil
  • 1/2 lb. smoked chicken italian-style sausage, finely chopped
  • 2 cloves garlic, minced
  • 10 oz. frozen spinach, thawed
  • 1 1/2 cup ricotta
  • 1 egg
  • 1/2 cup pesto
  • 3/4 teaspoon sea salt
  • Several grinds of fresh pepper
  • 2 cups mozzarella, grated and divided
  • 1/2 tablespoon lemon zest
  • 2 cups marinara sauce, divided
  • 1/2 cup parmesan cheese
  • 1/2 cup basil, rolled and cut into ribbons

Instructions

Preheat oven to 400 degrees.

Cook lasagna noodles according to package directions, drain and lay out an lightly oiled surface or parchment to prevent sticking.

Whisk ricotta cheese, egg, pesto, lemon zest, 1 cup of the mozzarella cheese, salt and pepper together in a medium-sized bowl.

When noodles are finished cooking, using the same pot, over medium-high heat, add oil and cook sausage to brown and build flavor. After 5 minutes, turn off the heat and add garlic to the pan and cook for 1 minute with the residual heat. Add the spinach to the pan and scrape up any browned bits. Scrape and fold into the cheese mixture.

Spread 1 cup of marinara sauce on the bottom of a Good Cook 11x7 Ceramic Pan. Spoon ½ cup filling and spread across the length of 10 lasagna noodles, stopping 1 inch short of the end. Roll up each noodle, finishing at the end with no filling on the final inch. Place rolls in pan and cover with remaining marinara sauce and sprinkle with remaining mozzarella and parmesan. Cover with foil and bake for 25 minutes. Uncover during the final 10 minutes and allow cheese to lightly toast.

Finish with fresh basil and serve.
