Instead of serving tender, juicy sliders between buns, this recipe shakes things up a bit and serves them between soft slices of sweet potato. The result is a flavor explosion! We’ve added havarti, bacon, and jalapeno to the top of our burgers. Then serve it all on a bed of peppery arugula with a creamy lemon mayonnaise. Sound too gourmet to make at home? No way! Jalapeno Bacon Sweet Potato Sliders
Toss the bun and add extra flavor to mealtimes and grilling season with this quick and easy recipe for Sweet Potato sliders.
- 1 large sweet potato
- 2 tablespoon coconut oil
- 1 pound ground beef
- 4 slices bacon, cooked
- 4 slices havarti, swiss or pepperjack cheese
- 2 jalapenos, sliced thin
- 2 cups arugula
- 1/3 cup mayonnaise
- 1/2 lemon, freshly squeezed
- 1/4 teaspoon paprika
- salt and pepper to taste
Microwave sweet potato until crisp-tender, about 6-9 minutes. Remove and allow to cool. Slice into 8 slices which are 1/4-1/2" thick. Melt coconut oil in a skillet over medium-high heat. Form ground beef into 8 small slider patties. Salt and pepper generously, then cook in the melted coconut oil until browned on the outside, and nearly cooked through. Place jalapenos, bacon, and cheese on top of each patty. Cover the skillet with a lid and cook until cheese is melted. Transfer sliders to a serving plate. Cook sweet potatoes in skillet until golden around the edges. Assemble sliders by placing patties and arugula on top of one slide of sweet potato. In a small bowl, whisk together mayo, lemon juice, and paprika. Drizzle over each slider before topping with the second slice of sweet potato. Serve immediately and enjoy!
