- 4 chicken breasts
- 2 Tbsp olive oil
- 2 Tbsp Fajita seasoning
- 1 cup chicken broth
- 6 large strawberries, hulled and finely diced
- 1/2 cucumber, peeled and finely diced
- 1/4 purple onion
- 1/4 cup chopped cilantro
- 1 clove garlic, finely chopped
- 2 Tbsp Lime juice
- corn tortillas
- Salt and pepper
Place chicken breasts, olive oil, seasoning and chicken broth in an Instantpot pressure cooker. Cover and cook on “poultry” setting for 15 minutes. Allow to decompress naturally, then remove cover and shred chicken.
In a large bowl, stir together strawberries, cucumber, onion, cilantro, garlic and lime juice. Salt and pepper, to taste.
Serve chicken in tortillas, topped with salsa.
