Baking Chicken on a Sheet pan

Greek Chicken Meal Prep

Serves 2     adjust servings


  • 2 Tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 2 chicken breasts, trimmed and diced
  • Juice and zest of 1 lemon
  • 1/2 teaspoon dried oregano
  • Salt and pepper
  • 3/4 cup cooked Israeli couscous or quinoa
  • 1 cup chickpeas, drained 1/4 cup green or kalamata olives
  • 2 Tbsp crumbled feta
  • 1/2 cup chopped parsley, basil or baby arugula
  • 1 English cucumber, diced
  • 1 1/2 cups cherry tomatoes, halved
  • 1/2 medium purple onion, diced


Heat oven to 400 degrees.
In a medium bowl, combine 1 Tbsp olive oil, garlic, diced chicken, lemon zest and oregano. Salt and pepper lightly. Spread chicken in a single layer on a nonstick baking sheet. Bake 15-18 minutes, until cooked through.
In a medium bowl, toss together 1 tbsp olive oil, lemon juice, couscous, chickpeas, olives, feta and parsley.
In a large bowl, toss together cucumber, tomatoes and onion
