Glazed Chili-Lime Bacon Wrapped Corn

Corn, bacon and our corn griller makes it easy to make a recipe that rivals even the most famous food trucks.

  • Yield: 4

Ingredients

  • 4 ears of fresh corn
  • 1 pound bacon
  • 1 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 1/2 cup honey
  • 1 Tablespoon fresh lime juice
  • Lime wedges for serving

Instructions

In a small bowl, mix honey and lime juice together, put a third of it in another bowl, set both aside. Shuck corn. Mix the chili powder, salt and pepper together. On a large cutting board, or parchment sheet, lay out 3 pieces of bacon. The sides should slightly overlap, lay a parchment sheet over top and gently beat with a meat mallet to press together. Remove parchment, and sprinkle about ½ teaspoon of seasoning across the bacon. Then take an ear of corn and tightly wrap the bacon around it. Repeat with remaining 3 ears. Place in fridge while the grill heats up.

Cook on medium heat, rotating every 5 minutes for 25 minutes. Baste with glaze and cook an additional 5 minutes, rotating as needed. Serve with lime wedges to squeeze over top.
