Quick and simple shortbread made with brown sugar and aromatic spices. A delicious holiday cookie!
In a large bowl or stand mixer, combine eggs, butter, dark brown sugar, flour, ginger, cinnamon and vanilla together until smooth. Press into a well-greased Sweet Creations Giant Gingerbread Mold. Bake at 375°F for 21-27 minutes, or until the center of the cookie is set and the edges turn golden brown. Remove and cool slightly before inverting on a cooling sheet. Cool completely before frosting.
