Foil Pack Pesto Chicken & Potatoes

Bring back the fun of foil-pack cooking with this easy recipe! Perfect for tossing on the grill or cooking over an open-fire, prepare these foil packs ahead of time and take them along when you go camping! Though we’ve included the instructions for oven baking, grilling or campfire cooking is about the same—simply bake until the chicken is cooked through.

Ingredients

  • 4 red potatoes
  • 2 large chicken breasts, diced
  • 3/4 cup pesto
  • 1 cup grape or cherry tomatoes, diced
  • 4 sprigs fresh basil, if desired

Instructions

Preheat oven to 400 degrees. Microwave potatoes for 3-4 minutes, until crisp tender. Remove and cool slightly, then cut into bite-sized chunks. In a large bowl, mix together potatoes, chicken, and pesto until well-coated with sauce. Spoon the mixture evenly into the center of four large pieces of foil. Fold the ends of the foil toward the center filling, then roll the edges together to cover the food and create a packet. Place packets on a large baking sheet. Bake for 17-24 minutes, or just until the chicken is cooked through. Remove and cool slightly. Top with fresh diced tomatoes and garnish with basil, if desired.
