Easy Pink Velvet Pancakes

Beet puree is a really fun and totally all-natural way to add a pop of color to baked goods, like these Easy Pink Velvet Pancakes.


  • 3 medium beets – stems removed and peeled, about 6.5 ounces once prepared
  • 2/3 cup cold water


Remove the stems and leaves from the beets and discard. Peel the beets and slice in half. Steam or boil the beets until tender. Remove the beets from the heat, add the beets to a blender with 2/3 cup of cold water. Puree until completely smooth. Set aside.
