As we were preparing this Crispy Asparagus and Prosciutto, wrapping each asparagus spear and drizzling it with olive oil, my kids remained skeptical. We don’t like asparagus they kept saying, even as they helped me trim the ends of each piece. I reassured them that this asparagus recipe was different, knowing that a little prosciutto and a delicious lemon thyme sauce would transform this ordinary green vegetable. I kept my fingers crossed as I slid the pan into the oven.
Sure enough, as soon as we pulled a sheet pan of this roasted asparagus wrapped in thin slices of crispy prosciutto, the kids were all in!
