Coconut Mojitos

Preparation 20 Serves 6     adjust servings


  • 1 bunch fresh mint
  • 1 cup sugar
  • Juice of 4 lemons
  • Juice of 4 limes
  • 3 Tablespoons cream of coconut
  • 1 (750 ml) bottle coconut rum
  • 1 liter club soda


Using a wooden spoon, muddle the mint leaves and sugar. The leaves will release some of their oils into the sugar. Pour into pitcher over ice, lemon juice, lime juice, coconut rum, club soda, and cream of coconut. Mix to combine. Serve in tall glasses with a sprig of mint for garnish.
