This drink came about completely by accident. I was at my best friend’s house and we were making these for a big family brunch. Accidentally, she poured a bottle of coconut rum in the pitcher instead of light rum. It was a very happy accident, because now I only make these instead of the regular version. (You can make a traditional mojito by using light rum and leaving out the cream of coconut.)
Being a girl that loves anything coconut, this is my cocktail choice for summer. It is light, refreshing, and has a tropical flare.
I like to make this drink by the pitcher, it is so much easier to make consistently and for a crowd. There is nothing worse than having friends over and making cocktails one by one. Make pitchers and let guests serve themselves.
Tip – Make sure to clean your mint very well. You don’t want any dirt in your beverage.
Using a wooden spoon, muddle the mint leaves and sugar. The leaves will release some of their oils into the sugar.
Juice 4 lemon and 4 limes. I love this juicer because it catches all of the seeds and pulp.
Pour juices into the pitcher. Add cream of coconut.
Stir to combine.
Pour in coconut rum and club soda.
Mix to combine. Serve in tall glasses with a sprig of mint for garnish.

- 1 bunch fresh mint
- 1 cup sugar
- Juice of 4 lemons
- Juice of 4 limes
- 3 Tablespoons cream of coconut
- 1 (750 ml) bottle coconut rum
- 1 liter club soda
