We’re sharing our favorite recipe for simple vanilla cupcakes. They come together quickly and taste incredibly good. The recipe starts with a basic vanilla cake mix, with buttermilk and extra eggs added in for moistness and lift. Classic Vanilla Cupcakes
- 1 box white cake mix
- 1/3 cup oil
- 4 eggs
- 1 cup buttermilk
- 1 Tbsp vanilla extract
- 2 sticks salted butter
- 1 Tbsp vanilla extract
- 2 cups powdered sugar
- 1/4-1/3 cup of milk
Preheat oven to 350 degrees. Combine all cake ingredients and place into a GoodCook Muffin Pan lined with silver foil cupcake liners. Bake cupcakes for 20-25 minutes, until a toothpick can be inserted into the center of one of the cupcakes and come out clean.
Allow cupcakes to cool, and then frost with buttercream. Top with sprinkles if desired.
For the frosting:
For the frosting, place softened butter in a medium bowl with an electric mixer and beat until creamy. Beat in vanilla, and powdered sugar. Sprinkle in powdered sugar, one 1/2 cup at a time, beating well and scraping sides of bowl often. Add food coloring, if desired.
