Cinnamon Swirl Mini Bundt

Serves 1 mini cakes     adjust servings

Settle in with a cup of coffee or tea and a slice of this delicious Cinnamon Swirl Mini Bundt.


  • 1 egg white
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unbleached all-purpose flour
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 1 and 1/2 Tablespoons milk
  • 1 Tablespoon brown sugar
  • 1/4 teaspoon ground cinnamon
  • Pinch of nutmeg


  • 1/2 cup powdered sugar
  • 1 Tablespoon milk


Preheat oven to 350°F. Spray a mini cake pan with nonstick spray.

In a bowl, combine egg white and sugar and mix with a fork until combined. Add in vanilla and melted butter and still until incorporated. Add flour, baking powder, and salt, and mix until combined. Stir in milk until incorporated.

In a separate small bowl, mix together brown sugar, cinnamon and nutmeg.

Pour ½ of the batter into the prepared cake pan. Sprinkle cinnamon sugar mixture over batter. Pour in remaining batter. Cook 15-17 minutes, or until the cake bounces back when you lightly touch it and a toothpick inserted comes out clean. Let cool for 10 minutes in the pan, then turn out onto a wire rack to finish cooling.

For the icing, combined powdered sugar and milk and stir until combined. If desired, thin out with additional milk. Drizzle over cooled cakes.
