Use the Good Cook Touch chopper to chop the green cabbage, red cabbage, and carrots. Transfer all to a large bowl. Add the scallions and chicken. Set aside. In a small bowl, whisk together the sesame oil, olive oil, rice vinegar, sugar, and garlic salt. Set aside. Melt the oil in a Good Cook skillet, over medium-high heat. Fry the wonton wrapper pieces in the oil until golden brown. Transfer cooked pieces to a clean paper towel and allow to cool completely. Toss salad together with sesame oil dressing and wonton pieces just before serving. Garnish with peanuts and cilantro, if desired.
