Pork Chop Caprese

  • 4 thick-cut pork chops
  • 2 Tbsp olive oil
  • salt and pepper
  • 8 thick slices fresh mozzarella cheese
  • 2 large tomatoes, sliced
  • 1 bunch fresh basil, leaves pulled from stems
