Cooking and Storing Butternut Squash

  • Look for a large butternut squash in the produce aisle or farmer’s market for batch cooking. Peel butternut squash with a GoodCook Y Shape Peeler. Cut butternut squash in half lengthwise and remove the seeds. Dice into 1” chunks with a GoodCook Touch Carbon Steel Chef’s Knife.
  • Set aside enough butternut squash for the meal prep recipe and freeze the rest. To freeze, place raw chunks on a sheet pan and place in freezer. Once frozen, transfer the cubes to a resealable freezer bag. Frozen squash lasts for up to a year in the freezer.
  • To thaw frozen squash, place in fridge overnight and cook as instructed below.
  • To cook squash for the meal prep, preheat oven to 400°F. Arrange squash on a GoodCook AirPerfect Nonstick Pan and roast for 25 to 30 minutes, until slightly browned and tender.

Butternut Squash Cranberry Skillet Meal Prep

Feed your soul with this warmly spiced butternut squash with tart cranberries and sausage. A comforting and filling meal for any time of day.

Ingredients

  • 4 cups butternut squash, cubed
  • 2 cup cranberries
  • 1 lb. sausage, sugar and nitrate free
  • 1/2 teaspoons nutmeg
  • 1/2 teaspoons sage
  • 1/2 teaspoons dried thyme
  • 1 Tbsp. extra virgin olive oil

Instructions

Add olive oil to a large skillet and bring to medium heat.
Add butternut squash with nutmeg, sage and thyme. Stir to combine and cook 5 minutes until softened.
Add cranberries and sausage to the pan. Cook another 5-7 minutes to desired tenderness.
