Blueberry Muffin Breakfast Cookies

Quick and healthy, these delicious cookies are ideal for breakfast. Sweetened with honey, instead of sugar and full of plant-based protein, you'll feel full for hours!

Ingredients

  • 1 stick butter, softened
  • 1 cup almond flour
  • 3/4 cup hemp seed hearts
  • 3/4 cup shredded coconut
  • 2/3 cup honey
  • 1/4 cup coconut sugar
  • 1 tablespoon cinnamon
  • 1 cup dried blueberries
  • 1/2 teaspoon baking powder
  • 1 tablespoon vanilla

Instructions

1. Preheat oven to 350 degrees. 2. Mix everything together in a big bowl. 3. Spoon giant scoops onto a parchment-lined baking sheet. 4. Bake for 10-12 minutes, or just until the bottom of the cookies is golden 5. Cool. Remove from pan. 6. Eat. Enjoy with coffee early in the morn.
