Preheat oven to 350. Beat together egg, butter, and sugar until combined. Mix in flour and vanilla until combined, and a dough forms. Take about a quarter of the dough and roll out to 1/2” between two sheets of parchment paper. Refrigerate for 30 minutes. Cut dough into desired shapes, and transfer to a parchment-lined Sweet Creations Textured Nonstick Large Cookie Sheet. Bake for 8-11 minutes.
