Birthday Cookie Cups

When you’re short on time, these cute Cookie Cups make the perfect party treat. The recipe starts with pre-made sugar cookie dough, with sprinkles added in for a festive look. The funfetti dough is rolled into balls and baked up in a Sweet Creations Textured 24-Cup Nonstick Mini Muffin/Cupcake Pan until golden.

While the cookies are still hot, indent each cup with the end of a fondant roller or with the back of a GoodCook Touch Stainless Steel Measuring Tablespoon.

The frosting comes together quickly and easily. Whip softened butter with electric beaters or in a stand-up mixer, adding vanilla in at the end. Start adding in powdered sugar one cup at a time. Adjust the sweetness to your liking, adding more powdered sugar by the cup if it’s not sweet enough. For a silky smooth texture, add milk, one teaspoon at a time until desired consistency is reached.

Birthday Cookies Cups

Ingredients

  • 1 package store bought cookie dough
  • 1/4 cup sprinkles

Frosting

  • 2 sticks salted butter
  • 1 Tbsp vanilla extract
  • 2 cups powdered sugar
  • 1/4-1/3 cup of milk

Instructions

Preheat oven to 350 degrees. Roll sprinkles into cookie dough. Roll out 1 oz balls of cookie dough into a Sweet Creations Textured 24-Cup Nonstick Mini Muffin/Cupcake Pan. Bake for 10 minutes and then remove from oven.

While still hot, carefully press down centers of cookies with a small fondant rolling pin.

For the frosting, place butter in a medium bowl with an electric mixer and beat until creamy. Beat in vanilla. Sprinkle in powdered sugar, 1/2 cup at a time, beating well and scraping sides of bowl often. Add milk, 1 tsp at a time until desired consistency is reached.

Once cookies have cooled, using a piping bag and a medium-sized piping tip to fill pressed divots with frosting and top with sprinkles.
