This recipe makes eight 4” pies. Preheat your oven to 375ºF and gather your ingredients (below) for some amazing summer treats.

Step 1: In a large bowl, gently combine berries, corn starch, sugar, vanilla and lemon juice until well mixed. Set aside.

Step 2: Unroll pie dough on a parchment-lined workspace. With a 4” Sweet Creations Nesting Cutter, cut each round of dough into 6 circles. Gather remaining dough, roll to ¼” thick, cut into 4 more circles, creating a total of 16.

Step 3: Brush egg wash around the outside edges of 8 circles of dough. Spoon about ¼ cup berry mixture into the center.

Step 4: With a Sweet Creations Rolling Pin, gently roll the remaining 8 dough pieces to 4.5”wide. Drape over berry mixture. Seal the outer edges of each mini pie with the Sweet Creations Pie Crust Tool. Brush tops with egg wash or butter, if desired.

Step 5: Transfer to a parchment-lined baking sheet. Bake for 25 minutes, or until golden brown. Allow to cool slightly before serving.

Ingredients

  • 3 oz (about ½ cup) fresh raspberries
  • 3 oz (about ½ cup) fresh blackberries
  • 1 cup fresh blueberries
  • 2 Tbsp corn starch
  • ¼ cup sugar
  • 1 teaspoon vanilla
  • juice of 1 lemon (about 1 Tbsp)
  • 1 egg, beaten
  • 1 (2-count) box refrigerated pie dough

Instructions
