Berry Apple Salad With Cream Cheese Balls
Sweet, savory, creamy and so very beautiful! This delicious salad is a perfect combo of everything we love about summer. With a tangy apple cider vinegar dressing, crunchy croutons
- 6 oz CHALLENGE cream cheese, chilled
- 5 oz spinach
- 1 apple, sliced
- 1 cup strawberries, hulled and halved
- 1 cup MRS. CUBBINSON's croutons
- juice of 1 lemon
- 1/3 cup apple cider vinegar
- 2 teaspoons Dijon mustard
- 1/3 cup honey
- 1/3 cup mayonnaise
- 1 teaspoon salt
- dash of ground pepper
Dice cream cheese into ½” cubes. Roll each cube into walnuts. Place balls in a bowl and refrigerate until ready to serve salad.
In a large bowl, toss together spinach, apple and strawberries. Drizzle with lemon juice.
Place all dressing ingredients in a blender, puree until smooth.
To serve, drizzle salad with dressing, top with cream cheese balls and croutons. Serve immediately and enjoy!
