Looking for a gorgeously simple side dish for your next potluck, party or holiday menu? This beautiful Zucchini, Tomato & Parmesan Gratin is must-try addition to any food table. Incredibly simple to make, it calls for just 5 basic ingredients, takes less than ten minutes to put together and looks beautiful when served.
Similar in flavor to succotash, this side dish pairs nicely with turkey, ham or beef. Making clever use of inexpensive veggies which are available year-round, you can enjoy this eat anytime–autumn, winter, spring and summer. It’s savory flavor tastes perfect all year long.
Perhaps the best part of this dish is, it’s easy to expand the recipe to fit any sized pan. We used the basic recipe below to fit in our 1.5 Quart Ceramic Covered Casserole, but it can be easily doubled to fit in our 9×13″ 2.5 Quart Rectangle Ceramic Dish if you need enough to serve a crowd.
We’ve opted to line the zucchini slices in rows, but you can also create a fanned out circle of slices when using round dishes. Whichever way you decide to prep this dish, we think you’ll find it a perfect complement to any meal. Here’s how to make this simple gratin:
Thinly slice a sweet onion and spread it onto the bottom of a ceramic baking dish. Then top with several layers of thinly sliced zucchini, yellow squash and tomatoes. For added color in our version, both roma and kumato tomatoes were used to add extra autumn-inspired color, but any tomato will do.
Drizzle your mixture with 1 stick of melted butter. If desired, you can add some chopped garlic or garlic powder to the butter for extra flavor.
Then sprinkle with parmesan. Grated or shredded parmesan works beautifully with this dish. Sprinkle with salt and pepper, and you’re ready to tuck this one in the oven! Once golden brown, your Zucchini Gratin is ready to serve and share!

Parmesan & Tomato Zucchini Gratin

- 1 sweet onion, sliced thin
- 2 zucchini, sliced thin
- 2 yellow squash, sliced thin
- 4 roma or kumato tomatoes, sliced thin
- 1/2 cup butter, melted
- 1/2 cup grated parmesan cheese
- fresh chopped parsley for garnish
- salt and pepper
Preheat oven to 400 degrees. Place onion slices in the bottom of a Good Cook 1.5 Quart Casserole dish. Stack together zucchini, squash and tomatoes, laying the stacks horizontally across the top of the onions. Drizzle with melted butter. Sprinkle with parmesan, salt and pepper. Bake for 17-24 minutes, or until parmesan is golden brown and zucchini is tender. Garnish with parsley. Serve and enjoy!
