Fresh fruit is always in season. But, we took particular inspiration from autumn when creating this easy Apple Slaw. Fresh apples, pomegranate seeds and grapes are tossed together in a creamy, sweet poppy seed dressing. Perfect as a side dish or toss in shredded rotisserie chicken and make it a meal. This fresh take is always delicious.
To make this slaw, we tried two different techniques. First, we shredded apples with the large grater attachment on our Mandoline Grater Set. With a handheld safety attachment, this made for quick and easy shredding, however, extra-crisp apples are highly reccomended for this method, since softer, riper apples don’t stand up well to the pressure of constant grating.
Next, we tried the Profreshionals Julienne Peeler, which made gorgeous, long shreds. But working with a small, slippery apple did mean being extra-careful to not knick fingers at the edges of the fruit.
The ultimate result? If you need to work quickly, use a mandoline grater. If texture is more important to you, try a julienne peeler. Though both options make a scrumptious slaw, there are different advantages to both prep options.
We also tried both techniques with a firm pear, as well (such a great way to use those underripe green ones!). The julienne peeler worked beautifully, creating soft uniform shreds, which we tossed right into the salad. If it’s autumn time, try adding a few pears to the recipe below. You’ll be glad you did!
Apple, Pomegranate, Grape & Poppy Seed Slaw
Remember to use firm apples for this recipe! Soft, overripe apples simply don't shred the same.
- 1/4 tablespoons mayonnaise
- 2 tablespoons lemon juice or apple cider vinegar
- 2 tablespoons white sugar
- 1/2 teaspoon pomegranate
- 1/4 teaspoon sea salt
- FOR THE SALAD
- 2 green apples, shredded
- 2 red apples, shredded
- 1/2 cup red grapes
- 1/2 cup purple grapes
- 1/2 cup pomegranate arils
Whisk together all ingredients for the dressing. Set aside. In a large bowl, gently toss all salad ingredients together. Drizzle with dressing, tossing carefully until coated. Serve immediately and enjoy!
