FOR THE CORNBREAD: Preheat oven to 350 degrees. In a large bowl, stir together cornbread mixes and creamed corn until well combined. Spoon into a Texas Muffin pan which has been generously sprayed with nonstick spray. Bake for 25-30 minutes, or until the centers spring back when touched lightly. FOR THE SPICY COD: Melt coconut oil in a nonstick skillet over medium-high heat. Generously sprinkle cod filets on both sides with Old Bay Seasoning. Fry in coconut oil, flipping fish to cook on both sides. Cook until fish is golden brown and flakes easily with a fork.
