My kids love coming home to a treat after school. They got a little spoiled when their Grandma was visiting last spring, and the spring before that as well, and she had their favorite Homemade Fudgy Brownies or a batch of Chocolate Chip Cookies waiting for them almost every day after school.
Sadly, I cannot compete with Grandma’s after school snacks. Even though they’re both my recipes, it just isn’t the same if Grandma isn’t the one doing the spoiling. And besides that, I’m super busy most days and not just sitting around whipping up treats for my kids before they get home from school (I wish!).
These 4 Ingredient Cookie Butter Blondies are the perfect solution, though! They hardly took me any time to make. Probably only about 5 minutes from start to popping them in the oven. The ingredients are super duper simple and stuff that I mostly always have on hand…unless it is one of those weeks that I never make it to the grocery store because there is no time.
Another great thing about these 4 Ingredient Cookie Butter Blondies is that my 8 year old can completely make them herself. The instructions are really straight forward. There aren’t any complicated measurements, stove top cooking, or confusing ingredients.
So, if my kiddos are really craving an after school treat and I haven’t had time to make one (and Grandma isn’t around!), then they can totally get something in the oven all by themselves. I’d say that’s a win for everyone!
4 Ingredient Cookie Butter Blondies feature Cookie Butter, Eggs, Flour, and a tiny bit of butter. I’ve added optional mini chocolate chips, because my kids love chocolate chips, but you could try adding sprinkles for a funfetti blondie recipe or chopped nuts in place of the chocolate chips.

4 Ingredient Cookie Butter Blondies
These 4 Ingredient Cookie Butter Blondies are a cinch to whip up in just a few minutes. For some extra flavor, try adding some mini chocolate chips.
- 1 1/2 cup Cookie Butter (i.e. Trader Joe’s Speculoos Cookie Butter)
- 3 eggs
- 1 tablespoon butter, melted
- 3/4 cup All Purpose Flour
- 1/4 cup Mini Chocolate Chips, optional
Preheat oven to 350 degrees F. Prepare a 9×9 pan by lining it with parchment paper. Set aside. In a medium sized mixing bowl, combine the cookie butter, eggs, and melted butter. Beat on low speed using a hand mixer. Add the flour and chocolate chips, and stir to combine. Spread the batter into the prepared pan, using a small off set spatula to smooth the top evenly. Bake at 350 degrees F for 15 – 20 minutes, or until puffy, cooked through, and slightly golden on top. Lift the blondies out of the pan by holding the edges of the parchment paper. Cool completely, and then cut into squares. Store in an airtight container.
