In a blender, puree watermelon, sugar, and lime juice together. Pour into an airtight, freezer-safe container. Cover and freeze overnight. Just before serving, use a fork to shred the ice into flake. Serve in hollowed-out mini watermelon rinds. Garnish with mint, if desired.
