Jelly Roll

Jelly rolls are part of my holiday heritage – every winter my grandmother and mother rolled a perfectly baked sheet cake into beautiful white and raspberry swirls. As a child, I watched mesmerized from the corner of the kitchen as they worked their magic, delighting in that first delicious bite. I’ve now taken over the duties of jelly roll maker, and this stunning dessert has become a holiday favorite in my own home. Inspired by my family recipe, I’m sharing my simple and easy-to-follow version, so you and your family can also enjoy this sweet and lovely dessert. If the thought of making a jelly roll intimidates you, have no fear. They’re easy to assemble and will make your holiday table look elegant and festive.

  • Get Festive. Our elegant version of red and green – finely chop pistachios and sprinkle on top of the cake to balance out the red raspberry swirls.
  • Tangy and Tart. Swap out raspberries for 2-1/2 cups fresh or frozen cranberries, combine in a saucepan with 1 cup sugar and ¼ cup water. Reduce heat and simmer, uncovered, for 5-6 minutes or until berries pop. Mash berries and strain, returning cranberry juice to the pan. Combine cornstarch and 1 Tablespoon water, adding to strained cranberry juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Chill.

Classic Raspberry Jelly Roll

Preparation 30 m Inactive Time 23 h Cook Time 17 m Serves 1 Jelly Roll     adjust servings

A classic vanilla sponge cake with homemade raspberry jelly filling. Serve with a dollop of whipped cream and enjoy with a cup of tea or coffee.

Ingredients

For the Filling

  • 3/4 cup sugar
  • 3 Tbsp cornstarch
  • 1 Tbsp lemon juice
  • 24 oz frozen raspberries

For the Cake

  • 6 egg whites, room temperature
  • 1 cup sugar, divided
  • 6 egg yolks
  • 1 teaspoon apple cider vinegar
  • 1 Tbsp vanilla
  • 1 1/4 cup flour
  • 2 Tbsp cornstarch
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cup powdered sugar

Instructions

For the Filling:

Mix all ingredients together in a large saucepan. Bring to a boil. Cook, stirring occasionally, until mixture is thick and nearly reduced in half, about 9-10 minutes. Remove from heat, transfer to a bowl and place in fridge until chilled.

For the Roll:

Heat oven to 350°F.

Spray a Sweet Creations 12x17” baking pan with nonstick baking spray. Line with parchment, then spray parchment generously with baking spray, making sure to coat the edges of the pan. Set aside.

Place egg whites and 1/2 cup of sugar in a stand mixer fitted with the whisk attachment. Beat until stiff peaks form. Transfer egg white mixture to a bowl.

Return mixer to the stand (no need to clean the bowl) and add remaining 1/2 cup of sugar, egg yolks, apple cider vinegar and vanilla to bowl. Beat for 4-5 minutes on high, until light colored and whippy. Slowly add egg white mixture into mixer, beating just until incorporated.

In a medium bowl, whisk or sift flour, cornstarch, baking powder and salt together. Add half of this mixture to the egg mixture, beat just until combined, then add remaining flour mixture to bowl, beat until incorporated. Do not over-mix.

Spread batter into the prepared baking sheet. Tap slightly to even the batter out in the pan. Bake at for 13-17 minutes, or just until center of cake springs back when touched lightly.

While cake is baking, lay a thin dish towel flat on the countertop and sprinkle generously with 1 cup powdered sugar. As soon as the cake comes out of the oven, invert atop dishtowel. Gently remove parchment paper. Starting with the narrow end, slowly roll the cake up with the towel. Allow cake to cool completely in rolled up towel. Once cooled, gently unroll the cake. Spread jelly filling across the top, leaving a 1/2” border. Gently roll the cake up again, this time tightly, and without the towel. Cover with plastic wrap and refrigerate for at least 2 hours, ideally overnight. Just before serving, use cheesecloth or a fine-mesh strainer to dust with 1/2 cup powdered sugar.

Swap in any frozen berry for the raspberries in this recipe.

Creamy Chicken Bacon Picatta

Preparation 10 m Cook Time 20 m Serves 4     adjust servings

A deliciously creamy twist on classic picatta, with the addition of bacon tossed into the pan. This recipe is irresistible!

Ingredients

  • 4 Tbsp butter
  • 1 Tbsp garlic paste or 3 cloves fresh-chopped garlic
  • 4 boneless chicken breasts, trimmed
  • 1 lemon, sliced
  • 2/3 cup fresh squeezed lemon juice
  • 3/4 cup heavy cream
  • 4 slices cooked bacon, crumbled
  • 1/4 cup capers
  • 1/2 cup shredded parmesan
  • salt and pepper
  • fresh chopped parsley (for garnish)
  • 8 oz cooked fettuccine (if desired)

Instructions

In a Good Cook 9" Touch Skillet, melt butter and garlic over medium heat. Salt and pepper chicken breasts on both sides. Place in pan and brown on both sides. Add lemon slices and cook just until brown. Place lemon slices on a plate, set aside.

Turn heat to medium.  Add lemon juice to pan. Cover and allow to cook until chicken is no longer pink, about 3-5 minutes. Remove cover add cream, bacon and capers. Serve chicken and sauce atop fettuccine (if desired).

Garnish with lemons, parmesan and parsley. Enjoy!

    The November 2017 Good Cook Give Thanks Giveaway by GoodCook (the “Promotion”) is open only to legal residents of the fifty (50) United States (including District of Columbia) who are at least thirteen (13) years old at the time of entry.   4. How to Enter
    Entrant must visit https://www.instagram.com/goodcookcom/ during the Promotion Period, log in to their existing Instagram account (or create a free account and then log in), view the promotional content and follow the instructions to receive one (1) entry.

Limit of three (3) entries per person, during the Promotion Period. Multiple participants are not permitted to share the same Instagram account. Here Is Your 1 Week Thanksgiving Checklist

Thanksgiving is right around the corner, and we’re already craving a plate of turkey with all the fixings. If you’re hosting this year, it can be intimidating and stressful to get everything just right. That’s why we created a one-week Thanksgiving checklist, to make it easy for you to plan and get organized. Follow along to make sure you stay on task, and we guarantee your Thanksgiving will be a delicious success. We’ve also included some of our favorite classic recipes below, because gathering family and friends for a Thanksgiving meal is a truly magical occasion!

One Week Ahead

  • Review recipes and prepare a cooking schedule
  • Shop for non-perishable food items – canned and paper goods
  • Buy a frozen turkey
  • Make pie crust and freeze
  • Take stock of dishes, glassware, and linens

Three or Four Days Ahead

  • Begin defrosting turkey (see below for recommended thawing times)
  • Shop for perishable food items, like vegetables and cream.
  • Make dough for bread and store in fridge

Two Days Ahead

  • Wash and dry vegetables, then refrigerate
  • Chill beverages
  • Defrost pie dough

One Day Ahead

Perfect the Menu

Roast Turkey

Begin defrosting your frozen turkey in the fridge anywhere from 3-4 days before Thanksgiving. The general rule of thumb is 5 hours per pound, so a 15 pound turkey would need about 3 days in the fridge to thaw. Bread Stuffing

Magic Pumpkin Pan Pie

Preparation 10 m Cook Time 30 m Serves 12     adjust servings


Ingredients

  • 16 oz pumpkin puree
  • 1 can sweetened condensed milk
  • 1 Tbsp pumpkin pie spice
  • 4 eggs
  • 1 yellow cake mix
  • 1 cup butter, melted
  • 1 cup pecan halves
  • nonstick baking spray

Instructions

Heat oven to 350°F.

Spray a 9x13" baking pan with nonstick baking spray.

In a large bowl, whisk together pumpkin puree, sweetened condensed milk, pumpkin pie spice and eggs.

Sprinkle 2/3 cup cake mix in the bottom of the prepared pan. Top with pumpkin mixture.

Sprinkle remaining cake mix atop cake, drizzle with butter and top with pecan halves.

Bake for 24-28 minutes, or until the center of the cake is set.

Remove and cool before slicing. Top with whipped cream, if desired.

Honey Garlic Knots

Preparation 15 m Cook Time 2 h 30 m Serves 24 Knots     adjust servings

Sweet meets savory with these honey garlic dinner rolls. Simple and delicious, these easy-to-make rolls are perfect for Thanksgiving. 

Ingredients

  • 1 cup very warm water
  • 1 packet yeast
  • 3 Tbsp sugar
  • 1 cup heavy cream
  • 3/4 tsp salt
  • 3 1/2-4 cups flour
  • Olive oil spray
  • 3 cloves garlic, finely crushed
  • 1/2 cup butter
  • 1/3 cup honey
  • Fresh chopped parsley

Instructions

In a large bowl, stir together water, yeast and sugar. Allow to sit for 5 minutes. If the mixture begins to foam, the yeast is activated and ready for the next step.

Whisk in cream and salt. Slowly add flour, stirring to incorporate. Add just enough flour to a create a soft dough that is not sticky to the touch. Knead for 5-7 minutes. Place in a clean bowl, coat with olive oil spray. Allow to rise in a warm spot on countertop until double in bulk, about 1-1 1/2 hours.

Turn dough out of bowl. Roll small pieces of dough (about the size of a golf ball) into long thin ropes, twist and knot. Place on a nonstick or parchment-lined baking sheet. Allow to rise for 20 minutes more.

Heat oven to 350°F.

Finely chop garlic with the Good Cook Garlic Rock and Roller. In a microwave-safe bowl, melt butter with garlic and honey. Drizzle half of mixture over rolls. Bake in preheated oven for 18-22 minutes or until golden brown, basting rolls once with honey-garlic butter. Remove rolls from oven, immediately drizzle remaining honey-garlic butter over the top. Serve warm and enjoy!
