One-Pan Thanksgiving Dinner

Preparation 20 m Cook Time 30 m Serves 2     adjust servings

A skillet-top meal for two. This easy dish will have you feasting on classic holiday flavors for dinner, with just one dish in the sink.

Ingredients

  • 1 large sweet potato
  • 3 Tbsp Italian breadcrumbs
  • 3 Tbsp grated parmesan
  • 2 boneless, skinless chicken breasts
  • 1/4 cup butter
  • 2 cloves garlic, finely crushed
  • 1 1/2 cups fresh green beans, snipped
  • 1/2 cup fresh cranberries
  • 3 Tbsp honey
  • Salt and pepper
  • Olive oil spray
  • Fresh chopped curly parsley (for garnish)

Instructions

Pierce sweet potato with a fork. Microwave for 6-7 minutes, or until tender. Allow to cool, peel and dice into bite-sized pieces.

In a shallow bowl or pie pan, mix together breadcrumbs and parmesan. Press chicken into mixture, coat both sides.

Melt butter over medium-high heat in a Good Cook Touch Skillet. Add garlic, cook for 1-2 minutes. Place chicken breasts in pan, brown on both sides.

Add diced sweet potato, green beans and cranberries to pan. Drizzle with honey, and spray with a light layer of olive oil, using the Good Cook Oil Sprayer.

Turn heat to medium and cook until vegetables are tender and chicken is cooked through. If needed, cover with a lid to ensure chicken cooks through without burning.

Salt and pepper to taste. Garnish with parsley.

Flavor pairings: This dish tastes delicious with sparkling white wine or a mellow red wine, like Merlot.

Candy Cane Swirl Shortbread Cookies

Preparation 15 Cook Time 30 Serves 16     adjust servings

Take your holiday cookie game to the next level with these buttery shortbread bites topped with a festive peppermint swirl.

Ingredients

  • 2-1/2 cups flour
  • 1/2 cup sugar, plus
  • 1 cup butter, softened slightly
  • Seeds from 1 vanilla bean (optional)
  • 3/4 teaspoons coarse sea salt
  • 1 lb bag powdered sugar
  • 1/2 cup butter, softened
  • 2-3 Tbsp milk
  • 1 teaspoon peppermint extract
  • 24 peppermint candies

Instructions

Preheat oven to 350 degrees. In a large bowl or stand mixer fitted with a wire whisk, beat together the flour, sugar, and butter. Mix just until combined. Press mixture into a 9x13" pan. Bake for 25-30 minutes, or just until light golden brown.

Allow shortbread to cool slightly before cutting into squares, then into triangles with a very sharp knife.

In a large bowl or stand mixer fitted with a wire whisk, prepare the frosting by beating together the powdered sugar, butter and peppermint extract. Add just enough milk to whip the frosting until fluffy, and soft enough to spread.

Line a 9x13" baking sheet with parchment paper. (Make sure the parchment lines the entire bottom of the pan, and comes up over the edges of the pan for easy removal.) Place mints across the bottom of the parchment-lined baking sheet, place in preheated oven and allow to cook just until melted. Remove from the oven and immediately transfer the melted candy to a clean, flat workspace by grabbing the edges of the parchment and pulling it out of the baking dish.

Use a very sharp knife (spray the blade with nonstick baking spray for extra ease with this step!) to cut the candy into the same sized triangles as the shortbread. Spread a small amount of frosting on top of each cookie, top with a peppermint swirl triangle. Serve and enjoy!

Pumpkin Sprinkle Pinata Cupcakes

Preparation 20

Get ready for an avalanche of sprinkles! Bite into one of these pumpkin piñata cupcakes and you’re in for a sweet and festive treat! 

Ingredients

  • 1 batch Perfect Birthday Cupcakes, prepared (see notes section for recipe link)
  • 2 batches Our Favorite Vanilla Buttercream
  • 4 teaspoons orange food coloring gel
  • 1 1/2 cups Halloween-themed sprinkles
  • 1 1/2 cups orange sugar
  • 12 green tootsie rolls or salt-water taffy candies

Instructions

Cook and cool cupcakes. Prepare buttercream, tint to orange.

With a spoon or cookie scoop, remove the top center of each cupcake. Fill with sprinkles. Gently replace the very top of each cupcake over the sprinkles. With an ice cream scoop (like the Good Cook Smart Scoop Ice Cream Scoop0, place a scoop of frosting atop each cupcake. Roll in orange sugar until entire top of cupcake is coated. With a spoon, create pumpkin "lines" around the frosting.

With a rolling pin, flatten Tootsie rolls to 1/4" thick rectangles. Cut into two triangle shaped pieces. Mold one piece into a "stem" and the second into a "leaf". Press into the top of your pumpkin cupcakes. Serve immediately or keep fresh in the Good Cook Cupcake Pan and Carrying Case until ready to enjoy.

Monster Tie Dye Cake

Preparation 1 h Cook Time 4 h Serves 1 cake     adjust servings

It's almost Halloween, and this adorably spooky monster cake is perfect for your party! You'll love how simple and easy it is to make!

Ingredients

  • 3 boxes vanilla cake mix
  • 8 eggs
  • 2 1/2 cups water
  • 1 1/2 cups vegetable or canola oil
  • 2 Tbsp orange food coloring gel
  • 1-2 teaspoons purple food coloring gel
  • 1-2 Tbsp green food coloring gel
  • nonstick baking spray
  • 2 batches Our Favorite Vanilla Buttercream (see notes section of this recipe for link)
  • 5 orange suckers
  • 5 large edible candy eyes
  • 10 candy corn

Instructions

In a large bowl or stand mixer, combine cake mixes with eggs water and oil. Separate batter into 3 bowls. Tint one with 1 Tbsp orange coloring, one purple and one green. Mix until batter is fully colored.
Spray 3 GoodCook AirPerfect 9" Round Cake Pans with nonstick baking spray. With a Sweet Creations cookie scoop, place dollops of each different batter color around each cake pan, alternating colors, until batter has been evenly disbursed. Bake at 350°F for 24-28 minutes, or just until cake springs back when touched lightly. Remove and cool completely.
Prepare buttercream frosting, tint orange.
With a serrated knife, cut cooled cakes in half through the center of each cake, spread a thin layer of frosting between each layer and arrange on a cake plate, frosting and stacking until all rounds have been frosted and stacked. Cover with a thin crumb coat of frosting. Refrigerate until firm.
Transfer remaining icing into an OodleTips icing bag. Snip off the top of OodleTip bag, pipe long strips of "fur" onto the top and sides of the cake. Refrigerate until frosting is set, about 1 hour.
Place a small dot of icing on each of the suckers and affix edible candy eyes.
Just before serving, press suckers into the top of the cake. Press candy corns into the front of cake to create a monster "smile".
