Fajita Skillet Chicken

Ingredients

  • 2 Tablespoons coconut or vegetable oil
  • 4 boneless skinless chicken breasts
  • 1 package taco seasoning
  • 1/2 green pepper, seeded and sliced
  • 1/2 red pepper, seeded and sliced
  • 1/2 yellow pepper, seeded and sliced
  • 1/2 orange pepper, seeded and sliced
  • 1/4 purple onion, peeled and finely sliced
  • 1 cup shredded sharp cheddar
  • fresh chopped cilantro for garnish (optional)

Instructions

Heat oven to 375°F.

Heat a Good Cook Cast Iron Skillet over medium-high heat. Drizzle oil into hot skillet.

Dredge chicken breasts in taco seasoning. Cook in hot skillet until browned on both sides.

Arrange pepper and onion slices atop each chicken breast. Sprinkle with cheddar.

Transfer pan into oven. Cook for 15-18 minutes, or until cheese is melted and chicken is cooked through.

If desired, garnish with cilantro.

A muffin tin hack your whole family will love! Cinnamon roll buns are molded and baked on an upside down muffin tin, filled with ice cream, and drizzled with caramel sauce. A yummy new way to serve ice cream!

Ingredients

  • 1 (5 or 6-count) tube refrigerated cinnamon roll dough
  • 1 pint vanilla ice cream
  • 1/2 cup caramel sauce
  • 1/4 cup candied almonds or granola (optional)
  • blueberries or bacon bits for garnish (optional)
  • nonstick baking spray

Instructions

Preheat oven to 400°F. 

Turn a Good Cook 12-cup muffin tin upside down, spray with nonstick baking spray.

Place a cinnamon roll on the top of a muffin cup, then gently press it around the edges of the cup to create a "bowl". Repeat until all cinnamon roll dough has been used.

Bake for 12-15 minutes, or just until bowls are golden. Allow to cool slightly.

Asian Inspired Spaghetti Salad

Asian Spaghetti Salad

Preparation 20 m Cook Time 25 m Serves 12     adjust servings

Pasta salad gets a delicious twist with sweet and savory Asian flavors. Perfect for lunch or a light dinner!

Ingredients

  • 1 package Private Selection™ Spaghetti
  • 1 head purple cabbage, finely sliced or shredded
  • 1 cup shredded carrots
  • 1 English cucumber, diced
  • 1 cup Private Selection™ frozen Mukimame (shelled edamame)
  • 1 (12 oz) bottle Private Selection™ Orange Poppy Dressing
  • 1 Tbsp sesame oil
  • Chopped cilantro or diced green onion (for garnish)

Instructions

Cook spaghetti according to package directions, strain under cold water until pasta comes to room temperature. With the Good Cook Salad Spinner, clean and dry cabbage. In a large bowl, toss together spaghetti, cabbage, carrots, cucumber and mukimame. In a Good Cook Salad Dressing Shaker, combine dressing with sesame oil. Drizzle over salad. Toss until coated. Garnish with cilantro and/or green onion.
