Fajita Skillet Chicken
- 2 Tablespoons coconut or vegetable oil
- 4 boneless skinless chicken breasts
- 1 package taco seasoning
- 1/2 green pepper, seeded and sliced
- 1/2 red pepper, seeded and sliced
- 1/2 yellow pepper, seeded and sliced
- 1/2 orange pepper, seeded and sliced
- 1/4 purple onion, peeled and finely sliced
- 1 cup shredded sharp cheddar
- fresh chopped cilantro for garnish (optional)
Heat oven to 375°F.
Heat a Good Cook Cast Iron Skillet over medium-high heat. Drizzle oil into hot skillet.
