Almond Crescent Cookies

Preparation 10 m Cook Time 20 m Serves About 24 cookies     adjust servings

Delicious with tea, perfect for the holidays, these beautiful crescent cookies are a traditional classic.

Ingredients

  • 1 cup butter, softened
  • 2/3 cup sugar
  • 1 cup almond flour
  • 2 1/2 cups flour
  • 1 Tablespoon vanilla
  • 1 teaspoon pure almond extract or almond liqueur
  • 1/3 cup powdered sugar

Instructions

In a large bowl, cream butter and sugar together until very light and fluffy. Add almond flour, flour, vanilla and almond extract. Mix together until a slightly crumbly dough forms. Press 3 tablespoons of dough into the palm of your hand, squeeze, then gently place on a parchment-lined Good Cook Baking Sheet, and mold the cookies into crescents.

Bake at 350ºF for 9-12 minutes for a soft cookie. For a slightly crispier cookie, bake 15-20 minutes.

Sprinkle with powdered sugar while warm. Allow to cool before serving.

  • 2 (8 oz) Challenge Cream Cheese, softened
  • 1 (8 oz) container whipped topping
  • 1 (14 oz) can sweetened condensed milk
  • 1 (3.4 oz) cheesecake pudding mix
  • 1 (11.5 oz) jar caramel sauce
  • 1 (14.4 oz) box cinnamon grahams (crush 15 of the crackers)
  • 1/2 cup Challenge butter, melted
  • 1/4 cup cinnamon-sugar

Instructions

In a large bowl or stand mixer, beat together cream cheese, whipped topping, sweetened condensed milk, and pudding mix*. Whip until light and fluffy.

Line the bottom of a 9x9” Good Cook Ceramic Dish with unbroken cinnamon grahams. Spread half of the cream cheese mixture on top. Drizzle with half of caramel sauce. Top with another layer of unbroken grahams, top with remaining cream cheese mixture and caramel sauce.

In a large bowl, stir together crushed grahams and melted butter. Spread atop the cake, sprinkle with cinnamon-sugar. Cover with plastic wrap and refrigerate overnight before serving.

Ingredients

  • 1 large head romaine, stemmed and diced
  • 1/2 cucumber, diced
  • 6 hard-boiled eggs, diced
  • 1 pint strawberries, hulled and sliced
  • 1 1/2 cups Mrs. Cubbinson’s Classic Seasoned Croutons
  • 1 1/2 cups diced turkey and/or ham
  • 2 avocados, pitted, peeled and diced
  • Juice of 1 lemon
  • 1 bunch green onions, diced
  • 1 bunch cilantro
  • 4 oz Challenge Cream Cheese
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper

Instructions

Place romaine in a large, shallow dish.

Arrange cucumber, eggs, strawberries, croutons, turkey and ham, and diced avocados in strips across the top of the romaine. Drizzle avocados with lemon juice.

In a blender or mini food processor, blend together all dressing ingredients, puree’ing until creamy.

Drizzle dressing over salad just before serving. If desired, garnish with fresh chopped cilantro.

Creamy One Pot Pepperoni Pasta Salad

Preparation 15 m Cook Time 30 m Serves 6     adjust servings

The ultimate summertime pasta salad! This dish comes together quick. Simply toss the pasta in a pot with broth, Italian seasoning and creamy Challenge Cream Cheese, then bring to a boil and toss with fresh veggies and pepperoni once cool. It’ll be the first dish to disappear at your next potluck, guaranteed!

Ingredients

  • 1 (8 oz) box rotini pasta
  • 3 cups vegetable broth
  • 1 (8 oz) box Challenge Cream Cheese
  • 1 (6 oz) Italian dressing mix
  • 1 cucumber, peeled and diced
  • 1 bunch scallions or 1/4 purple onion, finely diced
  • 1 (3.8) package pepperoni, cut in half
  • 3/4 cup fresh corn kernels
  • 1 (3.8 oz) can sliced olives
  • 1 teaspoon smoked paprika

Instructions

Add pasta, broth, cream cheese and Italian dressing to a large pot. Cover and bring to a boil, then turn heat to medium-low and stir every 1-2 minutes until pasta is tender, about 12 minutes.

Remove from heat, transfer to a large Good Cook ceramic serving bowl. Refrigerate until cool.

Once cool, toss pasta with cucumber, scallions, pepperoni, corn and olives. Sprinkle with paprika.

  • 1/2 head purple cabbage, chopped
  • 1 head romaine, chopped
  • 1/2 cup chopped cilantro
  • 1/2 cucumber, diced
  • 1 bunch scallions
  • 2 Lemons, freshly squeezed
  • 2 limes, freshly squeezed
  • 1/3 cup honey
  • 1/3 cup canola or light olive oil
  • 1 (15 oz) can mandarin oranges, drained
  • 1 pint strawberries, hulled and sliced
  • 1/4 cup roasted sunflower seeds or toasted sliced almonds

Instructions

Heat oven to 425ºF.

Crush ramen, spread across the bottom of a Good Cook 9x9” baking pan. Drizzle with coconut oil, toss to coat. Bake for 10-12 minutes, or edges of ramen begin to turn golden brown. Remove and cool.

Toss together cabbage, purple cabbage, romaine, cucumber and scallions.

In a medium bowl, whisk together ramen flavoring packets, lemon juice, lime juice, honey and oil. Drizzle over salad, toss to coat. Add oranges, strawberries and sunflower seeds. Toss gently to mix. Serve and enjoy!

Copycat Fried Chicken Sandwiches

A delicious version of a fast-food favorite, serve these tasty sandwiches up any time of the year. But we think they are especially well matched to Memorial Day menus!

Ingredients

  • 1 egg
  • 1/2 cup dill pickle juice
  • 1 1/2 teaspoon garlic puree
  • 1 teaspoon garlic salt
  • 4 thin-sliced chicken breasts
  • 1 cup flour
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup coconut oil (for frying)
  • 4 burger buns
  • 8 dill pickle slices

Instructions

In a Good Cook Food Storage container, whisk together egg, dill pickle juice, garlic puree and garlic salt. Add chicken breasts, pressing to coat in mixture. Cover with airtight lid and refrigerate overnight.
In a large bowl, wish together flour, paprika, salt and pepper. Dip chicken breasts in flour mixture, back into egg mixture, and back into flour mixture once more.
Heat coconut oil in a Good Cook Touch Nonstick Skillet over medium-low heat.
Cook chicken in hot oil for 3-5 minutes per side, until golden brown and cooked through.
Serve on burger buns with dill pickle slices.

Blue Lemonade Party Punch

Spread summer cheer with this delightful blue raspberry lemonade. Serve the adult version at your next party, or keep kid-friendly for family picnics!

Ingredients

  • 6 lemons, sliced
  • 1 bottle blue raspberry vodka*
  • 2 cups sugar
  • 2 cups lemon juice, freshly squeezed
  • 1 gallon water or sparkling water
  • Crushed ice

Instructions

Fill a 2 gallon beverage dispenser halfway full with ice. Top with sliced lemons.

Add sugar, vodka, lemon juice and water. Stir every 1-2 minutes, until sugar dissolves.

Alternate preparation: Boil sugar with 2 cups of water to create a simple syrup. Cool, then stir into lemon with remaining ingredients. Best for immediate serving, as you don’t have to wait for the sugar to dissolve.

*For a liquor-free version, add 2 liters ginger ale and 1 packet blue koolaid.
