S'mores Cupcakes

Preparation 30 m Cook Time 21 m Serves 24     adjust servings

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 4 Tbsp butter, melted
  • 4 1/4 cup sugar
  • 1 1/2 cup butter, softened
  • 2 large eggs
  • 2 cups flour
  • 1 cup unsweetened cocoa powder
  • 1 Tbsp baking powder
  • 1 teaspoon salt
  • 1/2 cup sour cream
  • 1 1/4 cup water
  • 1 Tbsp vanilla
  • 1 1/2 cups egg whites
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla
  • 24 small squares of milk chocolate
  • 24 graham crackers

Instructions

Heat oven to 350ºF. Line a 24-count Good Cook Muffin Tin with cupcake liners.

For the Crust: In a large bowl, stir together graham cracker crumbs, 4 Tbsp butter and 1/4 cup sugar. Spoon into the bottom of cupcake liners.

For the Cupcakes: In a stand mixer, beat together 2 cups sugar, 1 1/2 cup softened butter and 2 eggs. Beat until light and fluffy. Add flour, cocoa powder, baking powder, salt, sour cream, water and vanilla. Mix just until smooth. Spoon atop crumb crust in muffin tin. Bake for 18-21 minutes, or until the center of cupcakes spring back when touched lightly. Remove from oven and cool completely.

For the Frosting: In a metal bowl or the metal bowl of a stand mixer, whisk together egg whites, 2 cups sugar and cream of tartar. Fill a large, deep-sided skillet with 2-inches of water. Bring water to a boil, place metal bowl inside skillet. Whisking the egg white mixture constantly, until sugar is dissolved and egg whites are warm. Remove from water bath. With a whisk attachment or electric beater, whip mixture for 5-7 minutes, until mixture is shiny, with stiff peaks.

Spoon mixture immediately into an OodleTips Icing Bag, snip the tip and pipe big swirls of frosting atop cooled cupcakes. Place frosted cupcakes on a baking sheet.

Heat oven to Broil. Place cupcakes on the top oven rack, keeping oven door open, watch closely. Toast  just until the tips of the frosting turn light golden brown, about 30 seconds. Remove, press a graham cracker and chocolate square immediately into the center of the cupcake, allow to cool.

Serve within 2 hours for best results.

Recipe Notes

OPTIONAL CHOCOLATE PUMPKIN TOPPING:

You'll Need:

  • 1 1/2 cups milk chocolate chips
  • 24 graham crackers

For the Topping: In a microwave-safe bowl, melt chocolate chips and transfer melted chocolate to an OodleTips icing bag. Snip a small portion of the plastic tip, pipe chocolate into pumpkin shapes on parchment paper. Place in freezer until cool.

Just before serving, slide chocolate pumpkins in front of the graham crackers on each cupcake. Note: the pumpkins are very tender to the touch, so we recommend using a pair of tongs to help with the transfer from parchment to cupcake!

Toffee Apple Pie

Preparation 15 m Cook Time 1 h Serves 8 slices     adjust servings

A perfect Apple Pie, with the addition of caramelly toffee bits tossed in before baking. Delicious when served with ice cream!

Ingredients

  • 6 red or green apples, cored, wedged and diced (peeling optional)
  • 1/2 cup + 1 Tbsp butter, melted
  • 3 Tbsp flour
  • 2/3 cup sugar
  • 8 oz toffee bits
  • juice of 1 lemon
  • 1 (2-count) box prepared pie dough rounds
  • 1/4 cup sparkling sugar (or coarse sugar)
  • 1 egg

Instructions

Heat oven to 350ºF. 

In a large bowl, stir together diced apples, 1/2 cup melted butter, flour, sugar, toffee bits and lemon juice.

Line a Sweet Creations Ceramic Pie Dish with one unrolled pie round. Spoon apple mixture into crust. Top with second pie round. Crimp the edges. Cut small slits around the center of the dough to vent, or cut a small heart or circle from the center of the pie with a paring knife.

Whisk together 1 Tbsp butter and 1 egg. Brush mixture atop pie crust with a basting brush. Sprinkle with sparkling sugar. 

Bake for 55-60 minutes. If the crust begins to turn a deep golden color, cover the edges with a Sweet Creations silicone pie cover to keep the pie from burning.

For best results, allow to cool before slicing. Enjoy with big scoops of ice cream, if desired.

Sparkling Sangria Lemonade

Ingredients

  • 12 Meyer lemons or lemons, (more for garnish, if desired)
  • 1 bottle white wine
  • 3/4 cup sugar or honey (optional)
  • 2 (2 L) bottles ginger ale
  • Crushed ice

Instructions

Slice half of the lemons, cut the other 6 in half and juice with a Good Cook Touch Hand Juicer. Pour juice into a large beverage dispenser. Top with white wine. If a very sweet drink is preferred, stir in sugar or honey.

Refrigerate until ready to serve, ideally overnight, for best flavor.

No-Cook Berry Eclair Crunch Cake

Ingredients

  • 32 oz lemon cookies, crushed
  • 1 cup butter, melted
  • 1 1/2 cup sugar
  • 16 oz strawberry jam
  • 1/2 cup water
  • 2 (8 oz) packets Challenge Cream Cheese, softened
  • 3 cups heavy whipping cream
  • 1 pint raspberries and/or blackberries
  • 1 quart strawberries, sliced
  • Nonstick baking spray

Instructions

In a large bowl, stir together crushed cookies, butter and 3/4 cup sugar.

In a smaller bowl, microwave jam with water, stir until well combined.

In a stand mixer, beat together 3/4 cup sugar, cream cheese and whipping cream until fluffy.

Spray a Good Cook 9x13” pan with nonstick baking spray. Spread a little less than 1/2 of the cookie mixture into the bottom of the pan. Top with half of the cream cheese mixture, then spread a little more than half of the raspberry jam mixture on top.

Layer again with cookie crumbs, reserving 1/2 cup for the topping.

Toss berries gentle in remaining jam mixture. Drizzle atop cake. Sprinkle with crumbs.

Refrigerate for at least 60 minutes, ideally overnight, before serving.

Ingredients

  • 8 cobs of corn, cooked or grilled
  • 1/2 cup green onions, chopped
  • 2 tbsp vinegar
  • 2 Tbsp olive oil

Instructions

Apple-Cheddar Turkey Wraps

Preparation 5 m Cook Time 5 m Serves 1 serving     adjust servings

Quick and simple, make a low-carb lunchbox that kids and grownups will look forward to eating. This simple idea is a keeper, and the GoodCook Square Meals set keeps it all fresg until you're ready to enjoy!

Ingredients

  • 3 slices deli turkey
  • 3 slices cheddar or jack cheese
  • 1/2 apple, wedged then sliced
  • berries, crispy chickpeas, snappea crisps or other (for filling your bento)

Instructions

Wedge apple with a GoodCook Apple Wedger. Slice thin with a GoodCook paring knife.  (If desired, drizzle with lemon juice to keep from browning).

Slice turkey and cheese in half. 

Lay one piece of halved turkey on a clean workspace. Top with cheddar, then with an apple slice. Wrap turkey up and around the apple. Press to secure, or gently skewer with a toothpick to keep the wrap in place.
