Thai Ribbon Chopped Salad

Preparation 15 m Cook Time 15 m Serves 4-6     adjust servings

Ingredients

  • 46 rainbow carrots
  • 1 cup bean sprouts
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped basil
  • 1 red pepper, sliced thin
  • 3 Tbsp fresh lime juice (and zest)
  • 3 Tbsp olive or canola oil
  • 3 Tbsp honey
  • salt and pepper, to taste
  • 1/4 cup roasted peanuts

Instructions

Set the Good Cook Mandolin slicer to julienne cutting. Using the finger protector, slice 3-4" pieces of carrot across the mandolin, julienning all carrots. Toss with bean sprouts, cilantro, basil and red pepper. Drizzle with lime juice, oil and honey. Toss to coat. Allow to marinate for 30-60 minutes, if desired. Top with peanuts before serving.

Recipe Notes

If desired, serve toss with diced grilled chicken breast, to turn this salad into a main dish.

  • 1/2 teaspoon ground pepper
  • 1 cup pomegranate seeds
  • 4 oz crackers
  • For the cheeseboard: grapes, olives, almonds, berries, etc.

Instructions

Mix cheese, herbs and pepper together. Wet hands slightly and gather cheese into a ball in your hands. Gently press pomegranates around the ball. Serve with crackers. If desired, serve on a cheeseboard with a variety of fruits, olives and nuts.

Asparagus Ham and Potato Fritatta

Preparation 10 m Cook Time 60 m Serves 8     adjust servings

Ingredients

  • 2 red potatoes
  • 7 eggs
  • 2 tablespoons flour
  • 1/4 cup milk or cream
  • 3/4 teaspoon salt
  • 2 tablespoons butter
  • 1/4 cup tablespoons onions, chopped
  • 1 garlic clove, chopped
  • 1/3 cup asparagus
  • 1/2 cup ham, cut into chunks
  • 1/4 cup havarti, gruyere, or white cheddar cheese, cut into chunks
  • fresh ground pepper
  • fresh chopped parsley

Instructions

Pierce potatoes with a fork and cook in microwave for 3-4 minutes, or just until tender. Remove and cut into bite-sized chunks.

In a large bowl, whisk together eggs, flour, milk, and salt. Set aside.
Place a Good Cook 10-inch skillet or cast iron skillet on a large stove burner. Turn heat to medium.
Melt butter in the skillet, add onions, garlic, and chopped potatoes. Cook until the onions are caramelized and slightly golden brown.
Pour the egg mixture into the skillet. Sprinkle asparagus, ham, and cheese chunks around the skillet. Sprinkle with fresh-ground pepper. Immediately turn the heat to low. Cover skillet with a lid (or a large plate). Doing so will allow the frittata to cook evenly through the center, without burning on the bottom. Leave covered and allow to cook over low heat for 10-12 minutes, or until the center of the frittata is set. Remove from heat and allow to set for 1-2 minutes before slicing and serving. Garnish with fresh chopped parsley, if desired.

Fluffy Lemon Ricotta Pancakes

Fluffy Lemon-Ricotta Pancakes, made with a mix. These are a perfect breakfast for Spring.

Ingredients

  • 2 cups pancake mix
  • 1 cup milk

Cheddar-Garlic Pull Apart

Grab a pack of refrigerated pizza dough and whip up this insanely cheesy Cheddar Garlic Pull Apart Bread. The slices dipping in marinara sauce are out of this world delicious!!

Ingredients

  • 2 (13.8 oz) containers refrigerated pizza dough
  • 16-18 slices cheddar or Monterey-jack cheese
  • 1/2 cup butter, melted
  • 3 cloves garlic finely chopped
  • 3 Tbsp chives, snipped into small pieces
  • nonstick spray

Instructions

 

Heat oven to 325ºF.

With a pair of Good Cook Kitchen Shears, unroll pizza dough and snip each into 9 squares. Place cheese between each piece and stack pieces standing up GoodCook 9x5" loaf pan, which has been generously sprayed with nonstick. Mix together melted butter, garlic and chives. Drizzle over bread.

Perfect NY Style Pizza

NY Style Pizza

Serves 8 | 40 minutes total

  • 4 1/2 cups flour
  • 1 Tbsp salt
  • 1 Tbsp sugar
  • 1 packet yeast
  • 3 Tbsp olive oil
  • 1 3/4 cups very warm water
  • 15 oz fireroasted crushed tomatoes
  • 3-4 cloves garlic, finely chopped
  • salt and pepper, to taste
  • 12 oz mozzarella, sliced
  • 1/3 cup loosely packed basil, finely chopped

Heat oven to 450ºF.

In a large bowl, stir together flour, salt, sugar and yeast. Add olive oil and warm water, stir until and knead until a soft ball of dough forms. If needed, add a few more tablespoons of flour, to ensure the dough is soft but not sticky. Roll out with a rolling pin until very thin, spread on a large Good Cook Pizza Pan or Pizza Stone.

Top with tomatoes, garlic, salt and pepper, then slices of mozzarella.

Bake 18-24 minutes, or just until edges of crust brown and cheese is bubbly. Garnish with basil, serve and enjoy.
