We like using a blender to quickly prepare the vinaigrette. Then assemble it all in the sturdy, seal-tight container, tote and go! Mediterranean CousCous Salad

Designed to fit the Good Cook Square Meals Salad Set, keep each of the ingredients fresh until you’re ready to toss this tasty salad together.

Ingredients

  • 3 cups baby spinach
  • 3/4 cup Israeli couscous, quinoa or acini de pepe pasta, cooked and cooled
  • 1/4 cup kalamata olives
  • 1/2 cup tomatoes, diced
  • 1/2 cup cucumbers, diced
  • 1/4 cup crumbled feta
  • 4 large leaves fresh basil
  • 2 Tbsp olive oil
  • 2 Tbsp white balsamic vinegar
  • 1 clove garlic
  • 2 teaspoons honey
  • Salt and pepper, to taste

Instructions

In the Good Cook Square Meals Salad Set, toss together spinach, couscous and olives. Arrange tomatoes, cucumbers and feta in their own sections on the top piece of the set. In a blender or mini food processor, puree basil, olive oil, vinegar, garlic and honey together. Salt and pepper to taste. Pour into the dressing section in the salad set. Secure plastic lid over dressing. Assemble salad together. Refrigerate until ready to serve. To serve, toss all ingredients together. Drizzle with dressing and enjoy!

Not yo' mamas meatball sub! We've added pepperoni and lots of mozzarella, turning this classic into an irresistibly hearty eat.

Ingredients

  • 2 tablespoons olive oil
  • 7 cloves garlic
  • 2 tablespoons sugar or honey
  • 28 ounces crushed, fire-roasted tomatoes
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoon red pepper flakes
  • 32 ounces frozen Italian Meatballs
  • 7 ounces pepperoni, diced
  • 1 teaspoon salt
  • 6 sub rolls or baguettes, sliced sandwich-style
  • 18 slices fresh mozzarella, thinly sliced
  • 1/2 cup fresh basil, chopped

Instructions

Preheat oven to 400 degrees. In a large pot, heat olive oil over medium-high heat. Add garlic, sugar, tomatoes, Italian Seasoning, red pepper flakes, meatballs, pepperoni, and salt. Heat until meatballs are warmed through. Spoon meatballs into the bottom half of each sub roll. Top each with 3 slices of mozzarella. Place in preheated oven and bake until the mozzarella is barely browned, about 13-17 minutes. Remove from oven, sprinkle fresh basil over the top of the sub rolls. Serve and enjoy!

Spicy BBQ Sriracha Tuna Melt

Preparation 15 Cook Time 5 Serves 2     adjust servings

The classic tuna melt has been kicked up a notch with a deliciously spicy BBQ sauce.

Ingredients

  • 2 (6 ounce) cans White Albacore tuna
  • 1/4 cup mayonnaise
  • 2 tablespoons purple onions, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 Everything bagels (plain or onion bagels will also work), sliced
  • 1/4 cup barbecue sauce
  • 2 tablespoons Sriracha
  • 2 slices pepper jack cheese
  • 1 jalapeno, sliced
  • salt and pepper to taste

Instructions

Preheat oven to 400 degrees. In a small bowl, combine tuna, mayonnaise, onions, and cilantro. Salt and pepper to taste. Spoon on top of the bottom half of each bagel. In another small bowl, whisk together the barbecue sauce and Sriracha. Drizzle over the top of the tuna. Place a slice of pepperjack over the sauce. Top with sliced jalapenos. Transfer to a parchment-lined baking sheet, then bake the tuna-topped bagels in preheated oven for 10-minutes. Place the top of the bagels in the oven for about five minutes, just to lightly toast the bagels. Serve sandwich-style or open-faced. Enjoy!

Mini Muffin Tin Funfetti Cheesecake

Serves 48     adjust servings

Mini muffin tin cheesecakes are a birthday-cake inspired treat that everyone will love. So tiny and so sweet!

Ingredients

  • 8 full graham crackers, finely crushed
  • 1 stick (1/2 cup) butter, melted
  • 1 1/2 cup sugar
  • 2 (8 oz) boxes cream cheese, softened
  • 3 eggs
  • 1/4 cup + 3 Tbsp rainbow sprinkles
  • 1 (8 oz) container whipped topping
  • rainbow sprinkles for garnish
  • 48 maraschino cherries with stems
  • nonstick baking spray (with flour) or mini parchment cups

Instructions

In a large bowl, stir together graham cracker crumbs, butter and 1/2 cup sugar. Spray a Good Cook 48-Cup Mini Muffin Tin generously with nonstick baking spray. Muffin Tin Mini Tater Tot Casseroles - Enjoy a classic, made in resolution-sized, serving-sized mini muffins. Our Good Cook 24-count tin means you can make enough for dinner...and to have as leftovers for the rest of the week!

Ingredients

  • 2 lbs ground turkey, cooked and crumbled
  • 2/3 cup alfredo sauce or light cream of mushroom soup
  • 4 eggs
  • 16 oz frozen veggies
  • 1 1/2 cups shredded sharp cheddar
  • 14 oz frozen tater tots
  • nonstick baking spray

Instructions

Heat oven to 400ºF. Spray a Good Cook 24-Count Muffin Tin with nonstick baking spray. In a large bowl, stir together turkey, alfredo, eggs, veggies and cheddar. Spoon approx. 1/4 cup of turkey mixture into prepared pan. Top with cheese and tater tots. Bake for 30 minutes, or until light golden brown around the edges and set in the center. Allow to cool slightly, before serving.

  • • 1/2 cup pecans
  • • 2 tablespoons sugar
  • • juice of 1/2 lemon
  • • 1/8 teaspoon garlic salt
  • • 1/8 teaspoon onion powder
  • • pinch chili powder
  • • 6 cups arugula
  • • 2 pink grapefruit, peeled and wedged
  • • 1 avocado, sliced thin
  • • 1 tablespoon chopped purple onion
  • • 3 tablespoons olive oil
  • • 3 tablespoons apple cider vinegar

Instructions

In a small saucepan, heat the pecans, sugar, lemon juice, garlic salt, onion powder, and chili powder over medium-high heat until the sugar begins to boil. Stir constantly until the sugar thickens and clings to the pecans. Turn out onto a piece of parchment and allow to cool completely. In a medium bowl, combine remaining ingredients. Upgrade classic krispy bars with an irresistible layer of creamy peanut butter.

Ingredients

  • 1 stick butter
  • 1 cup peanut butter
  • 1 pound gluten-free powdered sugar
  • 3-4 Tbsp milk

Instructions

In a large bowl, prepare the Peanut Butter layer by beating together the butter, peanut butter, powdered sugar, and milk, until smooth. Set aside. In a large, Good Cook pot, prepare the Krispy Bar layer by melting the butter over medium heat. Add the mini marshmallows and stir until melted. Stir in the krispy rice cereal until well coated with the marshmallows. Spread half of this mixture into a 10x13" Good Cook bar pan. Spread the peanut butter layer on top, then add the rest of the krispy rice layer over the peanut butter layer. In a small, microwave-safe bowl, melt the chocolate chips and butter together. Stir until smooth. Spread over the top of the krispy rice bars. Press the candy into the top of the chocolate layer. Allow to cool completely before slicing and serving.

Looking for a fun, healthy way to ring in the Chinese New Year (which falls on January 28th in 2017)? This recipe for Chinese Chop Salad is surprisingly simple to toss together, and tastes even better than something you might pay three times the money for in a restaurant.

And before you panic with the idea of chopping a whole bowl full of greens for this salad, tuck away that cutting board! Instead of spending lots of time slicing, we wanted to pull together a salad that’s as simple as it is fun to make. So this salad calls for our Good Cook Touch Food Chopper.

Chinese Chop Salad

Ingredients

  • 4 cups green cabbage
  • 1 cup red cabbage
  • 1 carrot
  • 5 scallions, chopped
  • 2 cups cooked chicken, shredded
  • 2 Tbsp sesame oil
  • 1/3 cup extra-light olive oil
  • 1/3 cup rice vinegar
  • 3 Tbsp sugar

  • 10 wonton wrappers, cut into 8 small triangles
  • 1/2 cup oil (for frying)
  • 1/4 cup roasted peanuts, chopped

Instructions
