Start any meal off right with a no-fail basic pizza dough. Soft and slighty sweet, this simple homemade pizza dough is perfect rolled thin and cooked until crispy, or rolled thick and baked until chewy.

Ingredients

  • 1 cup warm water
  • 1 tablespoon sugar
  • 1 tablespoon olive oil
  • 1 tablespoon instant yeast
  • 1 teaspoon salt
  • 2-3 cups flour

Instructions

In a large bowl, whisk together water, sugar, olive oil, yeast, and salt. With a wooden spoon, stir in the flour 1 cup at a time, until the dough begins to pull away from the sides of the bowl. Turn the dough out onto a clean, lightly floured work surface. Knead the dough 20-30 times, until it becomes soft and elastic. Cover the dough with a clean cloth, allow it to rest for 15 minutes. Roll out, place dough on a lightly greased Good Cook pizza pan. Top as desired. Bake in an oven preheated to 475 degrees for 10-12 minutes, just until the cheese begins to bubble.

Instructions

Preheat oven to 350 degrees. Spray a Good Cook 12-mini loaf pan with nonstick baking spray. In a medium bowl, whisk together 1 egg, cocoa powder, 1/3 cup sugar, and 1 teaspoon pumpkin pie spice. Spoon into the bottom of each mini loaf cup. In a second medium bowl, whisk together 1 egg, 1/3 cup sugar, the remaining pumpkin pie spice, flour, and pumpkin puree. In a smaller bowl, whisk together 1 egg white (discard the egg yolk of the third egg), softened cream cheese, and 3 tablespoons sugar. Swirl the cream cheese mixture slightly into the pumpkin mixture, then spoon on top of the brownie mixture in each cup. Sprinkle with mini chocolate chips. Bake for 10-15 minutes, just until the center of the brownies spring back when touched lightly. If using a mini muffin tin, bake time will be from 8-11 minutes. Cool slightly before removing from pan and serving.

This recipe makes twelve 3” round scones. Preheat your oven to 400ºF and gather your ingredients for these yummy mini treats.

Step 1: Place flour, sugar, salt and baking powder in a large bowl. With a pastry cutter or fork, work butter into the flour mixture until fine crumbs form. Gently stir in blueberries.   • ¾ cup half and half or whole milk

  • 4-4½ cups self rising flour
  • 1 egg, beaten
  • nonstick baking spray

Instructions

In a large bowl, whisk together water, sugar and yeast. Allow to sit for 5 minutes so yeast can proof. Once mixture begins to foam, add salt, butter, half and half, lemon zest, cinnamon and 4 cups flour to the bowl. Stir until a soft dough forms. Turn dough onto a lightly floured board, knead for 5 minutes. Transfer dough to a lightly oiled bowl. Cover and allow to rise until double in bulk, about 1 hour. Once dough has risen, turn it out onto a lightly floured cutting board. Flatten into a long rectangle, then slice the rectangle into 3 long strips. Roll each strip into a long thin rope, braid the three ropes together, slice into 6 equal pieces. Gently place each piece into a Sweet Creations mini loaf liner which has been sprayed with nonstick baking spray. Brush loaves with egg. Allow loaves to rise on top of warm oven, for about 30 minutes. Preheat oven to 350 degrees. Bake for 22-27 minutes, or until loaves are golden brown. Allow loaves to cool slightly before removing from pan. Dust with powdered sugar or drizzle with lemon icing, if desired. FOR LEMON ICING: Whisk together 2 cups powdered sugar, 1 tsp clear vanilla, juice and zest from 2 lemons. Drizzle over loaves.

Ramen Chicken Salad is kind of a classic potluck dish. I remember eating it many, many times during my childhood. With Labor Day coming up next weekend, you might like to give this a try for any picnic, BBQ, or potluck that you’ll be attending. This version is updated with lots of colorful produce for a variety of color, flavor, texture and nutrition!

Overnight Ramen Chicken Salad. Toss everything in a bowl and leave it until tomorrow! With peas, mandarin oranges, sweet red peppers and chicken, this delicious recipe is an absolute banger. Everyone loves it! Perfect for potlucks, parties, baby showers, bridal showers and more!

Rather than the salad being mostly a cabbage base, I included accents of sliced sugar snap peas, which provide a fantastic crunch and pop of bright green, chopped red bell pepper, juicy mandarin oranges, and green onion.

I also tossed together some shredded brussels sprouts with the shredded cabbage – try a store-bought mix of pre shredded cabbage coleslaw mix on this to save some time when it comes to prep work.

First, you’ll combine all the veggies, along with the shredded chicken, in a mixing bowl. I seriously love these mixing bowls from Good Cook because they are all the perfect sizes for various tasks in a recipe. The largest is perfect for all the salad ingredients, while the smallest is just right for whisking up the dressing ingredients.

Next, you’ll combine the olive oil, rice vinegar, liquid aminos (or soy sauce), sesame seeds, honey, ginger, salt and pepper in the small mixing bowl and whisk until well combined.

Pour the dressing over the veggies in the larger mixing bowl and toss to coat. Let it chill a couple of hours, or up to overnight so the flavors really develop.

Just before serving, I like to stir in the crunched up ramen noodles (uncooked), chopped cilantro, sliced almonds, and mandarin oranges. Then, garnish with a little extra sesame seeds on top before serving! Super easy!

Instructions

In a large mixing bowl, combine the brussels sprouts, cabbage, red bell pepper, sugar snap peas, and chicken. Stir to evenly distribute the ingredients. Set aside. In a small mixing bowl, combine the oil, vinegar, liquid aminos or soy sauce, 1 teaspoon sesame seeds, ginger, honey or agave, and salt and pepper (to taste). Whisk. Pour the dressing over the veggie and chicken mixture and toss to coat. Cover the bowl with plastic wrap and chill for 4 hours or up to overnight. After chilling remove the plastic wrap and discard. Stir in the cilantro, green onions, ramen noodles, almonds, and oranges. Serve cold.

Ingredients

  • 2 (8 ounce) bricks cream cheese, softened
  • 1 packet instant pudding, cheesecake flavor
  • 2/3 cup pure maple syrup (or 2/3cup sugar)
  • 3 cups whipped topping
  • 1 packet instant pudding, white chocolate flavor
  • ½ cup pumpkin puree
  • 1 tablespoon pumpkin pie spice
  • 1 package double-stuffed Oreos, crushed to a fine crumb
  • ½ cup bourbon chocolate sauce or chocolate fudge

Instructions

In a stand mixer, beat together 1 block cream cheese with the cheesecake pudding mix, whipped topping, and ¼ cup maple syrup. With a Good Cook spatula, transfer this mixture to a bowl and set aside In the stand mixer, beat together the second layer of filling by whipping 1 block cream cheese, remaining maple syrup, white chocolate pudding flavor pumpkin puree, and pumpkin pie spice. Chicken, bacon, parmesan crust, melted cheddar and cream cheese. This may just be the best sandwich you've ever eaten.

Ingredients

  • 2 pieces sourdough bread
  • 2 Tbsp butter, softened
  • 3 Tbsp grated parmesan
  • 1/4 cup whipped cream cheese
  • 1/4 cup shredded sharp cheddar
  • 1/2 grilled chicken breast, sliced
  • 3-4 pieces cooked bacon
  • 2 scallions, diced

Instructions

Heat a Good Cook Cast Iron Grill Pan over medium heat. Spread butter on the top of both pieces of bread, dip butter-side-down in parmesan. Flip parmesan side down. Mix together cream cheese and cheddar, spread mixture on both pieces of bread. Top with chicken, bacon and grilled cheese. Place cream-cheese covered sides of bread together. Grill on hot grill pan, until cheese is melted. Enjoy!
