5 Ingredient Basil Chicken and Pasta

5-Ingredient Basil Chicken Pasta
Trying to mix things up with some of our easy weeknight meals, I threw together this really simple 5 Ingredient Basil Chicken and Pasta. It was fresh, tasty, the kids liked it, and best of all…easy to make.5-Ingredient Basil Chicken Pasta

So, let me tell you how to make it. You’ll begin with about a pound of boneless, skinless chicken breasts. With cutting board to protect your counter,  like the 10×15″ Good Cook Touch Plastic Cutting Board, and a sharp knife for cutting, cut each chicken breast in half. Season with garlic powder, onion powder, salt, pepper, and Italian seasoning.

5-Ingredient Basil Chicken Pasta

In a deep sided skillet, like the Good Cook 11″ Saute Pan, melt butter over medium heat. Add the seasoned chicken and brown them on each side. You want to get a nice, golden brown crust to develop the flavors.

While you’re working on the chicken you can cook your favorite pasta. I picked farfalle, but any shape will do. After the chicken is browned an cooked through, you’ll set it aside to rest for a minute while you combine a little more butter and some half and half.

5 ingredient chicken 2_edited-1

It might sound pretty simple so far, and it is supposed to be, but after you prep the creamy sauce and stir in the cooked pasta, you’ll add a whole bunch of fresh basil which will really give you a punch of flavor (and color.)

You can easily dress up this recipe by adding other vegetables, some parmesan cheese, or extra seasonings to the pasta, but sometimes simple is just as good.

5-Ingredient Basil Chicken Pasta

If, however, you feel like adding a few extras to this recipe, I think a little lemon zest and some grape tomatoes taste really awesome in this basic creamy basil sauce. They’ll keep the flavors light and fresh.

5 Ingredient Basil Chicken and Pasta

Preparation 15 Cook Time 15 Serves 4     adjust servings

This 5 Ingredient Basil Chicken and Pasta comes together quickly for a simple weeknight dinner. Serve with a simple green salad or steamed broccoli for an easy side and a complete meal.

Ingredients

  • 4 Tbsp butter, divided
  • 1lb boneless, skinless chicken breasts, cut in half
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • salt and pepper, to taste
  • 2 cups half and half
  • 1 pound pasta, cooked according to package instructions
  • 1/4 cup thinly sliced fresh basil

Instructions

Melt 2 tablespoons of butter in a large nonstick pan or cast iron skillet over medium heat. Season the chicken with the garlic powder, onion powder, Italian Seasoning, salt and pepper. Add the seasoned chicken to the melted butter and cook until browned and cooked through, about 4 - 5 minutes on each side. Remove from pan and set aside on a plate. Add the remaining 2 tablespoons of butter to the same pan you cooked the chicken in and melt over medium heat. Then, add the half and half, and stir with a wire whisk until combined. Allow to simmer for about 2-3 minutes. Stir in the pasta and the basil, reserving 1 tablespoon of basil for garnish. Season, to taste, with salt and pepper. Return the chicken to the pan, placing it on top of the pasta and lightly spooning some of the sauce over the tops. Sprinkle with reserved basil and serve.

French Dip Party Sliders

French Dip Party Sliders | Make a whole pan of little sandwiches in a hurry with this easy recipe idea

One of my favorite sandwiches, this Slow Cooker French Dip Panini, just got miniaturized in these fun French Dip Sliders! The shredded beef is incredibly flavorful, thanks to the flavors of red wine, beef broth, plenty of garlic and onions, bay leaf and thyme. It cooks up so easily in the slow cooker, too.

French Dip Sliders-2_edited-1

These cheesy sandwiches are perfect for entertaining and are a crowd pleasing recipe. For a social gathering, such as tailgating or potlucks, I recommend preparing the meat the day before so it is no-fuss to make.

First, you’re going to season and sear your roast. This gets a nice crust on the outside of the meat and really develops the flavors. All the crusty bits left behind in the pan will enhance the taste. After that, sauté onion and garlic. Then deglaze the pan with some red wine and beef broth.

In the slow cooker, you’ll add the beef, the onion mixture, and the remaining ingredients for the beef. Let it cook until it is tender and shreds easily. Make sure to reserve the sauces left behind because you’ll serve that as a dipping sauce.

If you’re wondering how to shred a roast, it is basically the same method as how to shred chicken.

French Dip Party Sliders | Make a whole pan of little sandwiches in a hurry with this easy recipe idea

You can use two forks to pull the meat apart, your hands (after the meat has cooled), or – my favorite way – throw the whole thing in a stand mixer and mix on low speed.

For the sauce, I like to chill the liquid until the fat solidifies and is easy to scoop out and discard, then reheat it just before serving.

French Dip Sliders-5_edited-1

The assembly for the sandwiches is a breeze, too. Just place all the rolls on your Good Cook AirPerfect Baking sheet, spread some Garlic and Herb Boursin, top with meat, then provolone, and then the top of the roll. Bake. And done! I like to serve the sliders with the French Dip sauce as well as pepperocini peppers to add on to the sandwiches. Those are best served on the side, though, so individuals can customize according to their liking.

French Dip Sliders

Preparation 20 Cook Time 4-80 Serves 6     adjust servings

Party sized French Dip sliders so good, no one will be able to resist them.

Ingredients

  • 3 lb beef chuck roast, trim extra fat off
  • salt and pepper
  • 1 Tbsp olive oil
  • 2 medium yellow onions, chopped
  • 8 cloves garlic, minced
  • 2 bay leaves
  • 4 tablespoons Worcestershire sauce
  • 1/4 cup red wine
  • 2 Tbsp tomato paste
  • 1 3/4 cup beef broth
  • 2 sprigs fresh thyme or 3/4 teaspoon dried thyme

Instructions

Add the oil in your slow cooker's insert if it is stove top safe, if it is not stove top safe, then heat the oil in a cast iron pan or dutch oven. Heat the oil over medium-high heat. Season the beef chuck roast on all sides with salt and pepper. Sear all sides of the meat in the oil over medium-high heat until each side has a nice brown crust. Remove and set aside on a plate. In the same pan, saute the onion for 3 - 5 minutes, until golden, adding more oil if necessary. Then add the garlic and saute for 1 minute. Add the meat and any juices that have collected on the plate along with the onion and garlic to the slow cooker. Add the bay leaves, Worcestershire, red wine, tomato paste, beef broth to the pan (or slow cooker insert if using). If you're using fresh thyme, add the sprigs during the last 30 - 60 minutes of cooking. If you're using dried thyme, add it at the same time as the beef broth. Cover with a lid and cook on low for 6-8 hours, or until the meat easily shreds using a fork. Remove the meat and shred it or cut in into thin slices, however you prefer. Set aside in a bowl. Ladle off excess fat from the top of the au jus and discard the fat. To make this easier, you can chill the liquid until the fat solidifies. Discard the bay leaves and thyme sprigs. Keep the remaining au jus in the slow cooker to keep warm while you prepare the sandwiches. If desired, you can thicken the jus with flour or cornstarch. After adding flour or cornstarch and whisking to combine, bring the mixture to a rolling boil. Then lower heat to keep warm.

Slow Cooker Sesame Teriyaki Chicken and Veggies

Slow Cooker Teriyaki Chicken | A quick, fast and delicious dinner the whole family will fall in love with.
Slow Cooker Sesame Teriyaki Chicken and Veggies will fit the bill next time you’re craving Chinese takeout but want to cook at home.

teriyaki_edited-1

Slow Cooker Seasame Teriyaki Chicken and Veggies is super simple to prepare. And, thanks to your slow cooker, you can get dinner started earlier in the day when you have a busy afternoon.

You’re going to start first with some cubed boneless, skinless chicken breasts. You can also use chicken tenderloins, but they’re more expensive so it is up to you and what you personally prefer. If you use tenderloins you won’t need to cube them because they’re thin and smaller so they’ll cook relatively quickly in a slow cooker.

Brown the chicken in some yummy sesame oil with salt, pepper, and ginger. Browning meat prior to cooking in a slow cooker seals in moisture and adds to the over all flavor.

teriyaki-2_edited-1

Then, whip up a quick teriyaki sauce. I like to use liquid aminos because it is healthier, but the conventional equivalent is soy sauce. Liquid aminos are available at most stores, especially if the store has a health food section.

After the sauce is prepped, you’ll cook the chicken until tender and the sauce has thickened, and towards the end add the veggies. You don’t want to add the veggies too early in the cooking process, otherwise they’ll end up over cooked rather than nice and crisp but tender.

Once the chicken and veggies are all cooked, you can stir in some yummy rice noodles to complete the meal.

Fun Flavor Twists

Enjoy this recipe as written below. Or try these easy upgrades:

  • Going for vegeterian? Try cubed tofu in place of chicken.
  • If you prefer grain rice over rice noodles, substitute fluffy, jasmine rice. Just serve it on the plate and top with the chicken and veggies rather than tossing it to coat in the slow cooker
  • Mushrooms, red bell pepper, and sugar snap peas all make great vegetable additions or substitutions

You’ll definitely want a nice sharp knife to cut the cube the chicken and cut the broccoli into florets for this recipe. I love this set from Good Cook because it provides a variety of sizes for everyday use. Measuring spoons and cups are also essential to get the perfect proportions for the sticky, teriyaki sauce.

And to ensure the sauce is silky smooth, you’ll want to whisk it up with this Silicone Whisk so you avoid scratching your pants.

That’s it, this recipe is super simple, so you can definitely dress it up as you like with some of the ideas above, or eat it as is.

Slow Cooker Sesame Teriyaki Chicken and Veggies

Preparation 10 Serves 4     adjust servings
Slow Cooker Teriyaki Chicken | A quick, fast and delicious dinner the whole family will fall in love with.

Ingredients

  • 2 teaspoons Sesame Oil
  • 1 1/2 lb. Boneless, Skinless Chicken Breast, cut into cubes
  • 1/2 teaspoon Ground Ginger
  • Salt and Pepper, to taste
  • 1/4 cup Brown Sugar
  • 1/2 cup Liquid Aminos
  • 2 1/2 tablespoons Cornstarch
  • 3 1/2 tablespoons Rice Vinegar
  • 3 tablespoons Water
  • 1 medium sized crown broccoli, cut into bite sized florets
  • 1 large carrot, julienne sliced
  • 6 ounces Rice Noodles
  • 1/2 teaspoon sesame seeds, garnish

Instructions

Add the oil to a cast iron skillet or to the insert of your slow cooker if it is stovetop safe. Place the oiled pan over medium heat on the stove. Add the chicken and sprinkle with ginger, salt and pepper. Cook until browned on all sides. Meanwhile, whisk together the brown sugar, liquid amines, cornstarch, rice vinegar, and water. Add this mixture to the chicken and cook until thickened, stirring constantly. Then, remove from heat. If using a cast iron pan, transfer the chicken to the slow cooker. If you used your slow cooker liner on the stove, then place that in the slow cooker shell. Place the lid on the slow cooker, and turn the heat to low. Cook for 2 - 4 hours, or until chicken is very tender and completely cooked through and sauce is thickened. This will depend on your individual slow cooker as some cook hotter or cooler than others. Add the veggies to the slow cooker and if needed, add additional water if the sauce has become too thick. Alternatively, if it is too thin you can add additional cornstarch by whisking in 1 teaspoon at a time until desired thickness is achieved. Cook on high until the veggies are tender. Meanwhile, prepare the rice noodles according to package instructions. When the rice noodles are done cooking and the veggies are tender, transfer them to the noodles to the slow cooker. Stir until well coated with the sauce. Divide into 4 - 6 bowls, sprinkle with sesame seeds for garnish and serve.

Kiwi Strawberry FroYo Pops

Kiwi Strawberry FroYo Fruit Pops | kid friendly kitchen, easy summer dessert, diy popsicles

Homemade popsicles aren’t just fun to make, they’re beautiful, too. Create your own frozen treats and stay cool this summer with this simple 4-ingredient recipe for frozen yogurt pops.

Easy to make with the Good Cook ice pop maker, all you need is hi-fat Greek Yogurt (steer clear of the lowfat stuff, which will freeze with icy chunks, instead of soft and creamy). A little honey also keeps the froyo creamy. And the addition of fruit turns simple pops into pretty treats.

For best results, prepare at least 24 hours in advance. To remove pops, gently submerge the bottom half of the plastic pop maker in hot water and allow to sit for 10 seconds. A gentle tug on the wooden popsicles sticks, and the pops will slip right out.

Tomato and Mozzarella Pesto Spaghetti Salad

Spaghetti Salad | Caprese tossed into a delicious, chilled summer salad. Perfect for picnics and potlucks, this simple budget-friendly side also makes a great entree when topped with grilled chicken

This Tomato and Mozzarella Pesto Spaghetti Salad is simple to prepare and refreshing on a hot summer day. It is a perfect addition to any summertime potluck.

I love salads, especially pasta salad, during the summer months. Turning the oven on and eating hot, heavy foods is one of my least favorite things to do when it already feels too hot in the kitchen. Pasta salads are perfect for that!

Nothing is more refreshing than a bowl of cold pasta with fresh veggies and a dressing that is bursting with flavor. One of my new, favorite summertime salads is this Zucchini Tomato Basil Salad with Lemon Basil Vinaigrette.

Spaghetti Salad | Caprese tossed into a delicious, chilled summer salad. Perfect for picnics and potlucks, this simple budget-friendly side also makes a great entree when topped with grilled chicken.

I wanted to use some similar flavors and ingredients from that Zucchini Salad to make a fun potluck-style spaghetti salad. Tomatoes and basil are abundant this time of year so I’m always looking for new uses and fun ways to serve them.

First, I cooked some spaghetti according to the package instructions. After it cooled, I tossed it until coated with a quick dressing I whipped up using a store-bought Italian Style Vinaigrette dressing and my favorite, easy Basil Pesto. Just whisk the two together in a small bowl before pouring it over the pasta.

I really like the Good Cook OvenFresh Stoneware 3 Piece Mixing Bowl Set for this recipe because the large bowl is the perfect size for the recipe and they’re attractive enough to go from prep to table for serving.

After coating the pasta in the dressing, I added plenty of tomatoes and fresh mozzarella balls and a little bit of chopped salami and sliced peperoncini peppers for an extra punch of flavor and color.

Bacon Wrapped Buffalo Bleu Burger Dog

Buffalo PIN

One simple tool has become our favorite for summer grilling season. The Hot Dog Shaper, now available at Walmart, makes it easy to turn ground meat into a perfect-sized hot dog. Simply press, shape and grill. Ground beef works perfectly. We’ve given grilled chicken a go. And this week, we hit the backyard to barbecue up some bison dogs.

To really take “tasty” to a whole new level, our dogs were wrapped in salty bacon, then served in salty pretzel buns topped with bleu cheese. Yep. That recipe is real, and it’s happening right now.

Fun Flavor Twists

Enjoy this recipe as written below. Or try these easy upgrades:

  • Mix bleu cheese right into the meat before shaping for a cheese-infused dog.
  • Top with feta cheese, instead of blue and a tomato-basil-balsamic salsa for a Greek-inspired twist,
  • Serve grilled dogs with a whole bar of toppings. Guests will love customizing their own fixin’s.

Sausage, Potato and Beer Skewers

Beer Marinated Sausage and Potato Skewers | easy summer grilling, oktoberfest

Three straight months of great grilled eats. That’s what summertime is all about. And while grilled chicken and a buttery grilled Bob Steak is always a classic, we thought it was time to twist up the traditional and toss together some skewers. Not your conventional meat-n-sliced veggie skewers, but something crazy simple and wildly good looking. And, of course, something delicious.

With mini hasselbacked potatoes, kielbasa and a tasty maple-beer glaze, we think we’ve succeeded.

These skewers are great for those lazy evenings when it’s too hot to cook. They’re awesome for backyard BBQ’s, when you’re the host, but you don’t want to spend hours of prep time. They may even be the most brilliant Oktoberfest recipe ever. Serve with mustard for dipping and a side of sliced pretzel rolls, and you’ll have everyone raising their glasses with a hearty “Prost!”

Try These Twists

With so many different style of sausage now available in grocery stores, these skewers are easy to upgrade.

  • Go vegan and swap in vegan hot dogs or sausage, if you please.
  • Add a chicken sausage, instead of kielbasa and top with pesto for a savory option.
  • Use your favorite local beer. Or swap in honey, instead of maple syrup, for a nice flavor change.

Lemon Meringue Bars with a Shortbread Crust

Preparation 20 Cook Time 40 Serves 16     adjust servings

This simple twist on traditional Lemon Bars is baked with a buttery shortbread crust and topped with a light meringue. A simple way to enjoy all the pleasures of Lemon Meringue Pie in under and hour!

Ingredients

  • FOR THE CRUST
  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 cup Confectioners' sugar
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold butter, cut into 1-inch piece
  • FOR THE FILLING
  • 1 1/2 cups granulated sugar
  • Pinch of salt
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 4 large eggs
  • FOR THE MERINGUE
  • 3 egg whites
  • 1/8 teaspoon cream tartar
  • 1/2 granulated sugar

Instructions

Preheat oven to 350 degrees. Spray a 9x9 Good Cook Air Bake pan with nonstick baking spray. In a food processor, pulse together all ingredients for the crust until mixture resembles coarse meal. Press into the bottom of the prepared baking pan. Bake for 17 minutes to set the crust. In a large bowl, beat together all filling ingredients until well combined. Pour over the hot crust and return to the oven. Bake for 10-12 minutes, or just until the mixture begins to set slightly. While the lemon filling bakes, beat egg whites and cream of tartar until soft peaks form. Add sugar, mixing until the meringue is fluffy and shiny. Spoon this mixture on top of the hot, slightly-set lemon bar mixture. Return to oven and bake for 10 minutes more, or until the meringue is slightly browned at the tips. Remove and cool completely before slicing and serving.

3-Ingredient Slow Cooker Kalua Pulled Pork

3-Ingredient Crockpot Kalua Pork

Want the simplest recipe ever? Lucky for you, it’s also one of the tastiest entrees you’ve ever made.

Serve-up a classic Hawaiian-style pulled pork with this simple, 3-ingredient slow cooker recipe. Lathered in pink himalayan salt and liquid smoke (that you can find in almost every grocery store) the pork meat slowly cooks in your kitchen crock pot overnight. When it comes time to eat, the meat will literally melt right off the bone.

Serve with a side of sticky rice or top it on a bun with your favorite BBQ sauce, and you are set for the supper win.

Flavor Boosters

Though the beauty of this recipe is it’s basic ingredient list, it can also serve as a base for other fantastic flavors. Upgrade in this way:

  • add honey a chopped onion and your favorite bbq sauce instead of our suggestion for an equally tasty meal!
  • serve up your pulled pork, drowned in bbq sauce on a bun with a corn salad, cole slaw and a pickle
  • stuff your pulled pork in a soft shell taco and add some guac, tomatoes and onions for a southwestern feel.

  • 1 Tbsp Liquid Smoke

Place your pork shoulder in your slow cooker and add your salt and liquid smoke. I used my hands to rub the ingredients into the pork. Cover and cool on LOW overnight, for up to 20 hours. Pull apart with forks when done, serve with rice or on a bun.

Slow Cooker Baked Beans with Pork | picnic, fourth of july, party, slow cooker, crockpot baked beans, family style recipe, comfort food

For this recipe, first you’ll start by sautéing one large white onion that has been peeled and chopped. After that, you’ll add some boneless pork ribs that you’ve cut into cubes along with some of my favorite Southwestern Pork Rub for seasoning.

Cook the pork ribs until they’ve browned on all sides, then add the brown sugar, honey, fire roasted tomatoes, and canned baked beans.  Next, you’ll want to transfer the mixture to your slow cooker along with 1 lb. of sliced smoked pork sausage. Stir it all up with a spatula and let it cook on low for about 4 – 6 hours.

Fun Flavor Twists to Customize the Recipe

Enjoy this recipe as written below. Or try these easy upgrades:

  • Add roasted or sautéed bell peppers, poblanos, or jalapeños for extra veggies and a kick of spice.
  • Double up on the sausage and use 2 lbs rather than 1 and no pork ribs.
  • Add shredded or chopped beef brisket instead of pork – this is a great way to use up leftover meat, too!
  • Try this Slow Cooker Southwestern Pulled Pork as an addition rather than pork sausage and boneless pork ribs.
