Baby Goat Watermelon

Here's How to Make a Watermelon Baby Goat. Because Watermelon. Baby. Goat!!
We’re gaga for baby goats! You too? If baby goat videos always have you giggling, then grab a watermelon–this recipe is for you.

 

A medium to large sized seedless watermelon is turned into a baby goat with just a few simple cuts. To make this carved watermelon extra easy, we’ve created a tutorial video. Check it out.

As you can see from the video, the entire “baby goat” is made with a single, oval cut to the top of the watermelon. Here’s how to make this process simple:

  1. Turn watermelon on it’s side, allowing it to roll until it naturally stand still.
  2. With a sharp paring knife, score a large oval around the top of the melon.
  3. Using the Good Cook Watermelon Knife, carve the oval out of the melon. Gently pull to remove the piece.
  4. With the watermelon knife, cut melon into cubes. Scoop cubes from the melon with a large spoon. Transfer to a large bowl, set aside. If needed, pour any water from the bottom of the melon. 
  5. Now working with the oval piece, slice all but 1/4″ of pink fruit from the piece. 
  6. Cut the oval into the following shapes with a sharp paring knife, like the Good Cook 4″ Nonstick Paring Knife.

7. Slide the foot pieces beneath the melon to keep it stable. 

8. Assemble the baby goat, using wooden toothpicks to attach the head to the front of the melon. Attach the horns and nose to front of the head with toothpicks, as well.

9. Attach two blueberries for eyes with two toothpicks.

10. Fill the back of the baby goat with cubed watermelon. Serve and enjoy!

Bacon Caesar Overnight Layered Salad

Preparation 30 Serves 12     adjust servings

Decadently layered with greens, veggies and creamy mayo, this Overnight Layered salad is the greenest comfort food in town!

Ingredients

  • 1/2 head iceberg lettuce
  • 4-5 hard boiled eggs
  • mayo (1/2 to 1 pint)
  • 1 green pepper
  • 1 yellow pepper
  • 1/4 cup shredded cheese (we used parm)
  • 8 slices of cooked and crispy bacon
  • 3-4 cups of baby spinach
  • fresh herbs of your choice (we used cilantro)
  • green onions (amount to taste)

Instructions

Chop all ingredients in the style you like. (We coarsely chopped all of our ingredients including the hard boiled eggs). Begin with a layer of iceberg lettuce, then baby spinach. Top with a layer of fresh herbs (we used cilantro) and then peppers and green onions. Spread on a layer of mayo then repeat layers. End in a final layer of mayo, top with parmesan cheese and then finally crispy bacon. Sprinkle herbs on top for garnish. Refrigerate overnight. Toss or serve scooped out in layers.

When feeding a crowd, this Baked Italian Sandwich, featuring 3 kinds of meat, provolone cheese, roasted red peppers and peperoncini, fits the bill.

Growing up, my dad was famous for his big Italian Sandwiches. It was something he always did when making sandwiches for a crowd all at once. It was easy, because you weren’t making individual sandwiches for each person, and they were GOOD.

If we had a trip to the beach or the zoo planned, you can bet that our dad was going to make a trip to the deli to buy all kinds of meat and cheese and that he’d pile a large loaf of Italian bread high with all of his favorite fixings. He’d then slice the loaf into individual sandwich sized pieces and wrap each in foil or plastic wrap, and then stash them in our cooler until it was time to eat.

I decided to make something that reminded me of what my dad always made. My dad always spread Italian dressing on one side of the bread and mayo on the other, but I decided to try Basil Pesto rather than mayo since I had some in the fridge. SO GOOD!

I piled a bunch of lunch meat (turkey, ham, and salami) along with provolone, roasted red peppers, and peperoncini on top of the meat. My dad usually used lettuce, tomato, and bell peppers, but I wanted to bake my sandwich, so I opted for additional toppings that would taste good heated through with cheese melted all over them.

After assembling the sandwich, wrap it tightly in foil. It will be big, so pressing it down to compress it a little is ok. Then, place it on a Good Cook AirPerfect Nonstick Baking Sheet and bake it until it is hot through and the cheese is melted.

After baking, you can slice it into 6 sections, or even 12 (by cutting the original 6 in half) if you’re offering this more as an appetizer. It is best served hot, so plan to serve it immediately.

Baked Italian Sandwich

Preparation 10 Cook Time 15 Serves 6     adjust servings

An irresistibly good, great big sandwich. Easy to make ahead, perfect for parties, picnics and potlucks.

Ingredients

  • 1 - 12 ounce ciabatta loaf
  • 3 Tbsp basil pesto
  • 3 Tbsp Italian dressing
  • 6 oz sliced ham deli meat
  • 3 oz sliced salami deli meat
  • 6 oz sliced turkey deli meat
  • 4 oz sliced provolone cheese
  • 1/4 cup sliced roasted red peppers
  • 1/4 cup sliced peperoncini peppers
  • 1/2 teaspoon dried Italian seasonings

Instructions

Preheat the oven to 400 degrees F. Slice the loaf of bread in half down the middle from end to end. On one half of the bread, spread the pesto. On the other half of the bread, spread the Italian Dressing. On the pesto side, layer half of the ham, half of the turkey, half of the salami, and half of the cheese. Then, repeat the layers with the remaining meat and cheese. On the Italian Dressing side, layer the roasted red peppers and the peperoncini peppers. Sprinkle with Italian Seasoning. Place the two halves together, wrap tightly with foil, and place on a baking sheet. Transfer the baking sheet with the wrapped sandwich to the oven and bake for 15 minutes, or until the sandwich is heated through and the cheese is melted. Unwrap the sandwich and slice into sixths. Serve immediately.

Instructions

Cover with aluminum foil and bake at 350 degrees F for 40-45 minutes or until cheese is bubbly and melted into the dogs. Garnish on top with red onion and serve!

    S'mores. Cheesecake. Salted Caramel. This crazy-simple dessert is the combination of all your summertime dreams.

    Ingredients

    • 3 cups dark or semi-sweet chocolate chips
    • 2/3 cup sweetened condensed milk
    • 2 (8 oz) boxes Challenge Cream Cheese, softened
    • 1 bag mini marshmallows
    • 1/2 cup squeezeable dulce de leche (or caramel ice cream sauce)
    • 1 Tbsp sea salt flakes (like Maldon) or coarse sea salt
    • 1 box graham sticks or graham crackers

    Instructions

    In a microwave-safe bowl, melt together 2 cups chocolate chips and sweetened condensed milk just until smooth and stirrable. Place in a large bowl or stand mixer. Add cream cheese. Beat until smooth. Line a 8 or 10" cast iron skillet with parchment paper. Spread cream cheese mixture evenly into the bottom. Sprinkle with remaining 1 cup of chocolate chips. Top with marshmallows. Drizzle with 1/3 cup dulce de leche. Place under broiler, just until marshmallows are toasted (about 30-60 seconds). Remove and drizzl with remaining dulce de leche. Sprinkle with sea salt. Serve with graham sticks.

5-Ingredient Creamy Chicken Taco Alfredo

I love One Pot Pastas. They make dinnertime so easy in my house because they don’t use a dozen of different dishes and pots and pans to prepare and they’re usually really quick to make. Also, like this 5-Ingredient Creamy Chicken Alfredo, they don’t require a ton of ingredients, or weird random things that I don’t usually have on hand already.

This 5-Ingredient Creamy Chicken Alfredo is completely a pantry meal for me. I always have pasta in my pantry and it is pretty unusual that I don’t have rotel in there as well. Chicken, cilantro, cream, and cheese are also on my weekly shopping list because they’re versatile and can add a lot of flavor to the simplest of meals.

Pantry meals are great because I think they help keep the budget on track since you’re relying on simple, basic ingredients to prep a meal. Pasta can really help stretch a meal (and a small amount of meat) a long way.

This recipe comes together really quickly. First, you’ll season some chicken with your favorite Taco Seasoning. Store-bought works great, or you can throw together a batch of this Spicy Taco Seasoning and keep it on hand in your spice cabinet for lots of other recipes.

I like the Good Cook 11″ Cast Iron Skillet to prep this meal. It browns the chicken up really nicely and it is a nice size for a one pot meal.

Another bonus of cast iron is that it moves effortlessly from stove to oven, if you are prepping a recipe that requires transferring the dish to the oven, or you just want to keep the meal warm while you set the table and prep a salad. Cast iron also looks attractive set on the table before dinner is served.

After browning the chicken, you’ll prep a quick sauce that consists of butter, cream, cheese, and rotel – kind of like a Mexican alfredo sauce. Then, slice the chicken into strips using a knife, like the Good Cook Non-Stick 5-inch Santoku. These knives are my favorite all-purpose style because they tend to fit nicely in my smaller hands due to the handle shape.

Transfer the cooked pasta and chicken to the pan with the sauce and garnish with a little extra rotel and chopped cilantro (if you like cilantro!). Super easy and tasty. For a full meal, you can prep a quick salad or steam some vegetables and you are all set.

You can easily add to this basic recipe if you want – black beans, corn, bell peppers, and sautéed onions area all great additions if you have them on hand!

5-Ingredient Creamy Southwest Chicken Alfredo

Preparation 15 Cook Time 20 Serves 4     adjust servings

Creamy Alfredo mixed with favorite taco flavors for a 5-ingredient dinner everyone will love!

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 Tbsp taco seasoning
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 cup heavy cream
  • 1/2 cup Mexican cheese blend
  • 1 can Mild Rotel or chopped tomatoes, 2 Tbsp reserved for garnish
  • 8 ounces Penne Pasta, cooked according to package instructions
  • Garnish: 2 tablespoons chopped fresh Cilantro Leaves

Instructions

Pat the chicken dry on both sides with a paper towel. Sprinkle with the taco seasoning on all sides. Heat the olive oil in a cast iron pan over medium heat. Add the seasoned chicken to the pan and cook, turning once, until the chicken is completely cooked through (about 5 minutes per side). Remove chicken from the pan, place on a plate, cover with foil. Add the butter to the pan that the chicken was cooked in and melt over medium heat. Slowly add the heavy cream, whisking to incorporate all the seasonings and browned bits left behind from cooking the chicken. Whisk constantly and cook for about 2 minutes. Add the cheese, rotel (reserving 2 tablespoons for garnish), and stir until thickened and the cheese is melted. Stir in the cooked pasta and reduce heat to low. Remove chicken from the foil covered plate, slice into strips. Place the sliced chicken on top of the pasta and sprinkle with reserved rotel and optional cilantro garnish for a pop of color. Serve immediately.

Ingredients

  • 6 oz spaghetti noodles, cooked
  • 1 zucchini, cut into spirals or julienne strips
  • 1/4 cup pesto
  • 1 cup cherry tomatoes, sliced
  • 1/4 cup chopped basil
  • 2 grilled chicken breasts, sliced

Instructions

In a large bowl toss together noodles, zucchini and pesto. Place in a serving bowl, top with tomatoes, grilled chicken and basil. Enjoy!

First, we grilled ground beef into a Bacon-Guac Burger Dog. Which was ridiculously delicious. Then, we hit the test kitchen to try a whole new combo–the Cheddar-Stuffed Taco Chicken Burger Dog. Like a cheese-stuffed hot dog, only made with ground chicken. This flavor combo promised to be a fun one. The results? Check ’em out:

Cheese-Stuffed Chicken Taco Burger Dog

Taco seasoning and ground chicken make the base for these insanely tasty burger dogs. You gotta give this one a try!

Ingredients

  • 1 lb ground chicken
  • 1 packet taco seasoning
  • 6 sticks cheddar string cheese
  • hot dog buns
  • 1 cup prepared pico de gallo or salsa
  • 1 cup prepared guacamole
  • 1/2 cup sour cream
  • 1/2 cup chopped cilantro

Instructions

In a large bowl, stir together chicken and taco seasoning. Press chicken mixture into the Good Cook Burger Dog Shaper, filling halfway fill. Press a cheese stick in the center, then cover with meat. Form 6 dogs, molding meat mixture, as needed, to seal cheese inside. Grill on a hot grill or griddle, until cooked through. Serve in hot dog buns, topped with pico, guac , sour cream and cilantro. Ingredients

  • 1 (14 oz) bag frozen strawberries
  • 3 bananas, peeled and frozen
  • 1 cup heavy cream
  • 1/2 cup honey, pure maple syrup or agave
  • 18 cream-filled cookies, crushed

Instructions

In a hi-speed blender or food processor, puree strawberries, bananas, heavy cream and honey together until smooth. Gently fold in crushed cookies. Serve immediately, if soft-serve texture is desired. Or smoothie mixture into a parchment-lined loaf pan, cover with plastic wrap and freeze until ready to serve.

Ingredients

  • 1 1/2 cups cooked chopped chicken
  • 8 oz spaghetti
  • 1 TBS garlic chopped
  • 5-6 cups of chicken broth
  • 1 cup of cream
  • fresh basil and grated cheese to garnish

Instructions

In a single pot combine spaghetti, broth, cooked chicken, garlic and cream. Cook on medium high heat (simmering) for 12-15 minutes until spaghetti is tender and cooked. Garnish with freshly chopped basil and grated cheese! Enjoy!

Popcorn Chicken Sandwich Bake

Stuff crispy popcorn chicken inside soft buns, smother in a maple syrup glaze and bake to perfection with this perfect-for-tailgating or covered dish supper meal!

Ingredients

  • 2 packages of hawaiian rolls or hamburger buns
  • 16 oz of cooked popcorn chicken
  • 3/4 cup maple syrup
  • 1 cup of butter

Instructions

In a small saucepan bring to a simmer the butter and syrup and cook until melted. Lay your buns in a deep dish baking pan and open each bun. Layer your already baked popcorn chicken on the buns and drizzle a little glaze on top. Cover with the bun lids, smother in the remaining maple syrup and bake at 350F for 20-30 minutes or until golden brown!
