Shredded chicken is super versatile for weeknight dinners, so I almost always keep small, 1 – 2 cup, portions of my favorite Shredded Tex-Mex Crockpot Chicken in the freezer. I love the flavor that this chicken adds to really simple at home Mexican fare, like these Easy Baked Wonton Chicken Taquitos. Don’t have time to slow cooker your chicken? No problem! You can purchase canned chicken or check the deli aisle of your grocery store for ready-to-go shredded rotisserie chicken.
If you prefer homemade, try making your own Easy Roasted Salsa Verde. Any favorite store-bought brand will work, too. To mix up the flavors, try regular red tomato based salsa in place of Salsa Verde and experiment with different cheeses.
I like pre-shredded Mexican blend cheese best, but you can use Monterrey Jack, Pepper Jack or even just regular cheddar.
Once you have the chicken taken care of, all you have to do is combine a few ingredients (cream cheese, Mexican cheese and Salsa Verde) with the chicken. Then roll the creamy, cheesy chicken mixture into Wonton rolls. Then, brush with oil and bake.
Enjoy immediately from the oven for best results. Once cooked, you’ll have a baking sheet full of crispy-on-the-outside, hot-and-cheesy on the inside chicken bites. Perfect as an appetizer or serve them up for dinner.

Easy Baked Wonton Chicken Taquitos
- Cooking Spray
- 1/4 cup Salsa Verde
- 1.5 ounces Cream Cheese, softened
- 2/3 cup shredded Mexican cheese blend
- 16 wonton wrappers
- 1.5 cups cooked and shredded chicken
- 1 tablespoon olive oil
- 1 tablespoon chopped cilantro (for garnish, optional)
Preheat oven to 400 degrees F. Lightly grease a baking sheet, such as the 9x13 Air Perfect Bakeware Pan, with cooking spray. Set aside. In a medium mixing bowl, combine the salsa verde, cream cheese, and Mexican cheese blend. Stir until combined. Add the shredded chicken and mix well. Divide the mixture evenly between each of the wonton wrappers. Place the chicken mixture on the wrapper and roll up, leaving the ends open. Then, place rolled wrappers on the prepared baking sheet. Repeat until all wrappers have been used. Using a pastry brush, brush the tops of each rolled wonton wrapper with a small amount of olive oil. Place the pan in the oven on the middle rack and bake at 400 degrees F for 15 - 25 minutes, flipping them halfway through, or until crispy and golden. Place the baked taquitos on a plate and sprinkle with the chopped cilantro. Serve, immediately, with salsa and guacamole for dipping.
