  • 1 box cake mix (vanilla or chocolate)

1. Empty the contents of cake mix into a mixing bowl 2. Empty the contents of one bottle of soda into the dry mix 3. Mix well 4. Pour into cupcake tins or cake pan and bake according to the directions on the box.

There’s an old Irish proverb that says “laughter is loudest where food is the best.” And we couldn’t agree more. Gather friends around a table, feed them good food and even the most dreary evening will turn into a deliciously enjoyable affair.

This time of year, dreary evenings seem to happen a lot. From late winter greys to springtime rain, the weather has us heading to the kitchen for comfort food (and a room full of friends), constantly. So we turned to classic Irish fare as inspiration for a hearty casserole that’s perfect for feeding a whole crowd of favorite people.

Colcannon and Corned Beef Casserole

To make this dish, we relied on two shortcuts–instant mashed potatoes and canned corned beef. If you prefer a more authentic flavor, feel free to make your favorite mashed potatoes from scratch. This dish is a great way to use leftover corned beef, as well, supposing you have some in your fridge after a St. Patty’s day feast. 

No matter how you prepare it, this dish delicious. Fresh chopped herbs season the mashed potatoes, transforming them into delicious colcannon. The corned beef is coated in a light gravy, which keeps the meat moist and tender. 

Working with canned corned beef can be a tricky process. The meat is soft and sticky, so using a Meat Chopper is almost a necessity when prepping the gravy. A soft spatula doesn’t quite break up the meat enough, but a meat chopper makes it easy to break the mixture up to cook it evenly.

Once the dish is whipped up, a few pats of butter are added, creating a crispy browned layer once baked.

Corned Beef and Colcannon Casserole

Preparation 15 Cook Time 30 Serves 9     adjust servings

Our version of Shepherd's Pie, inspired by all the best classic Irish comfort foods


  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 1/4 cup sweet onion, finely chopped
  • 1 (12 oz) can corned beef
  • 2 tablespoons cornstarch
  • 1 cup half and half (or heavy cream)
  • 4 cups mashed potatoes, prepared
  • 1/2 cup fresh chopped parsley, sage or dill
  • 6 tablespoons butter
  • salt and pepper


Preheat oven to 400 degrees. In a large skillet, heat olive oil over medium-high heat. Add garlic and sweet onion, cook until aromatic, about 1-2 minutes. Add corned beef and cornstarch, mixing together with a meat chopper until the texture of ground beef. Turn heat to medium, add half-and-half and 1/2 teaspoon pepper to the pan. Cook just until mixture begins to thicken. Remove from heat and pour into a 9x9" pan or Good Cook 3-Quart Square Ceramic Baking Dish. Mix together mashed potatoes and parsley. Salt to taste. Spoon on top of corned beef mixture. Top with several pats of butter. Bake for 20-30 minutes, or until the mashed potatoes begin to brown lightly. Serve and enjoy!

Golden, flaky and amazingly delicious, this oozy chocolate Danish is just the perfect complement to any cup of coffee, it’s also super easy to make. You need just 4 simple ingredients and one sturdy baking sheet to get started. Prep it in 10 minutes, bake and you’ll be pulling apart a hot, flaky pastry in less time than it takes to hit the corner store bakery.

You can use either milk or dark chocolate for this recipe. We’ve tried both and recommend using dark chocolate. Milk chocolate ends up tasting tremendously sweet. But dark chocolate recreates that classic flavor of a Paris croissant.

4-Ingredient Chocolate Bar Puffed Pastry

Chocolate Bar Danish

Preparation 10 Cook Time 20 Serves 4     adjust servings

2 basic ingredients plus an egg and sugar. That's all you need to make these insanely delicious slices of chocolate croissant.


  • 1 puff pastry sheet
  • 1 large (4.25 oz) chocolate bar, dark or milk
  • 1 egg
  • sugar for sprinkling.


Thaw your puff pastry sheet according to directions on the label. Once thawed, lay flat on a cutting board. Lay your chocolate bar on top of the puff pastry sheet. Using a pizza cutter or pastry wheel, slice diagonally from the edge of the pastry sheet to the edge of the chocolate bar all the way down until you have made slits all along the edges of both sides. Fold the diagonal strips you have formed onto the chocolate bar overlapping and forming a braid appearance as best as possible. The main point is to make sure to cover any of the exposed chocolate. Trim any excess where needed and use to path any holes if necessary. In a separate bowl, whisk an egg to make an egg wash for the pastry. Line a baking sheet with parchment paper then lay your pastry on top. Brush the egg wash onto the pastry and then sprinkle with sugar. Bake 400 degrees F for 18-20 minutes or until golden. Allow to cool slightly, then cut and serve!

Who doesn’t love pretzels, pizza, jalapeños and bacon? I definitely don’t know many people who wouldn’t say YES to all four of those things. Why not combine them into one delicious, fun pizza?

We love to make homemade pizza in our house and this was a super fun recipe to experiment with. Ispired by one of my all-time favorite Mac ‘n Cheese recipes – Jalapeño Bacon Mac n Cheese‘.

Mini Jalapeño Popper Pretzel Pizzas

I recently had a really good appetizer at a restaurant while out with a friend. It was pretzel bites with a jalapeño, bacon, cheesy dip…of course that got me thinking about those flavors again.

I’d never before tried to make a pretzel crust pizza at home before, but I thought if all those flavors tasted so good together in little bites, I bet they would be pretty amazing as individual mini pizzas.

The Preztel Pizza Hack

The trick to turning a regular pizza crust into a pretzel pizza crust is to quickly submerge the dough into a saute pan filled with boiling hot water and baking soda prior to baking it. Fishing the boiled crust out of the water can be a bit finicky, but an extra-strong 12-inch slotted spoon makes it easy to remove the rounds while also draining off excess liquid.

After you dip the crust in the water, you’ll let it soak for a few minutes, then brush it with and egg wash and sprinkle it with salt.

Those incredibly easy extra steps change your classic pizza crust into a pretzel pizza crust. I think it is easier to work with smaller dough portions, so I decided to make mini individual sized pizzas, which my kids loved.

For some reason, kids think that anything individual sized or mini is way better than a full sized counterpart.

After prepping and partially baking the crust, I took them out of the oven and added a creamy, pepper jack cheese topping and sprinkled each with jalapeños, poblanos, red onion, bacon, and a tiny bit of cheddar cheese for extra color.

When topping pizza with crumbled bacon, my favorite way of cooking the bacon is to make these Perfect Homemade Bacon Bits.

You can top these Pretzel Pizzas with anything you like, the method for cooking the crust will be exactly the same. So, if you prefer pepperoni or mushrooms and olives, feel free to give those toppings a try as well.

Cucumber Crunch Sushi

Preparation 15 Serves 6     adjust servings

Homemade sushi, made in minutes. If you're looking for ponzu sauce, it can be found in the Asian aisle of most grocery stores. Enjoy!


  • 1 cucumber
  • 6 oz whipped cream cheese
  • 12 1"x1 1/2" pieces of imitation krabmeat
  • 1 jalapeno, cut into thin 1/2" long strips
  • 2 scallions, cut into 11/2" pieces
  • 1 teaspoon sesame seeds
  • sriracha
  • ponzu sauce
  • SPECIAL EQUIPMENT: mini skewers


With a vegetable peeler, peel the cucumber into long strips. (Once you hit the seeded center, flip the cucumber over and peel again. Discard the seeded center, or enjoy for another use.) With a clean paper towel, gently dry cucumber so the pieces are not slippery. Place cream cheese in a large pastry bag. Snip a 1/2" piece from the tip of the bag. Pipe a 1" line of cream cheese just to the left of center on one cucumber slice. Place a slice of krab, jalapeno and 2-3 scallion pieces on top of the cream cheese. Tightly roll cucumber slice around the cream cheese. Secure with a skewer. Repeat until all cucumber slices are rolled. Arrange on a serving platter. Drizzle with ponzu. Place a dot of Sriracha on top of each piece of sushi. Garnish with sesame seeds and extra chopped scallions, if desired.

Chicken topped with mango, avocado and sweet basil salsa. Served in a lettuce wrap. This quick, simple recipe makes an ideal light dinner or appetizer. Look in the Asian section of the grocery store for ponzu sauce, it can almost always be found near the soy sauce.


  • 1 tablespoons sesame or olive oil
  • 1 pound ground chicken
  • 1 clove garlic, finely chopped
  • 1 head Bibb lettuce
  • 1 avocado, peeled and diced
  • 1 mango, peeled and diced
  • 1/3 cup loosely packed, fresh basil, chopped
  • 1 lime, freshly squeezed
  • 1/4 cup ponzu


Heat oil in a skillet over medium-high heat. Brown chicken and garlic until cooked through. Toss together avocado, mango, basil and lime juice. Serve hot chicken in lettuce cups, top with basil salsa. Drizzle with ponzu and enjoy.

Easy Pink Velvet Pancakes

Beet puree is a really fun and totally all-natural way to add a pop of color to baked goods, like these Easy Pink Velvet Pancakes.


  • 3 medium beets – stems removed and peeled, about 6.5 ounces once prepared
  • 2/3 cup cold water


Remove the stems and leaves from the beets and discard. Peel the beets and slice in half. Steam or boil the beets until tender. Remove the beets from the heat, add the beets to a blender with 2/3 cup of cold water. Puree until completely smooth. Set aside.

2-Ingredient Appetizer: How to Make Firecracker Shrimp

Everybody deserves to have a good, easy appetizer in their back pocket. And by “back pocket”, we mean mouth. And by appetizer, we mean this one.

Firecracker Shrimp. Inspired by a Thai restaurant favorite, we’ve recreated this recipe with just two easy little ingredients–shrimp and wontons. (You’ll also need some oil for frying.) Firecracker SM 

Firecracker Shrimp

Preparation 10 Cook Time 10 Serves 8     adjust servings

Quick and simple, this easy app is perfect for everything from casual dinners to cocktail parties. For dipping, we recommend purchasing a prepared Sweet Chili Sauce, which can be readily found in the Asian section of most grocery stores.


  • 1 lb jumbo shrimp, raw and peeled
  • 8 wonton wrappers, sliced in half diagonally
  • 2 cups coconut, vegetable or canola oil (for frying
  • 3/4 cup prepared sweet chili sauce


Cut a 3-4 small slits down the inside of the shrimp, gently press them flat with the blade of a knife. Roll each shrimp tightly in a wonton triangle. If needed, wet your fingers slightly with a small bit of water to secure the wrap at the end. Heat oil in a wok over medium. Fry shrimp until golden, about 1-2 minutes per side. Transfer to a plate with a Good Cook Asian Spider Strainer. Serve with chili dipping sauce. Enjoy!

Apple Poppy Slaw

Easy Autumn Side Salad: Grape, Pomegranate and Poppy Seed Apple Slaw

Fresh fruit is always in season. But, we took particular inspiration from autumn when creating this easy Apple Slaw. Fresh apples, pomegranate seeds and grapes are tossed together in a creamy, sweet poppy seed dressing. Perfect as a side dish or toss in shredded rotisserie chicken and make it a meal. This fresh take is always delicious.

To make this slaw, we tried two different techniques. First, we shredded apples with the large grater attachment on our Mandoline Grater Set. With a handheld safety attachment, this made for quick and easy shredding, however, extra-crisp apples are highly reccomended for this method, since softer, riper apples don’t stand up well to the pressure of constant grating.

Next, we tried the Profreshionals Julienne Peeler, which made gorgeous, long shreds. But working with a small, slippery apple did mean being extra-careful to not knick fingers at the edges of the fruit. 

The ultimate result? If you need to work quickly, use a mandoline grater. If texture is more important to you, try a julienne peeler. Though both options make a scrumptious slaw, there are different advantages to both prep options.

We also tried both techniques with a firm pear, as well (such a great way to use those underripe green ones!). The julienne peeler worked beautifully, creating soft uniform shreds, which we tossed right into the salad. If it’s autumn time, try adding a few pears to the recipe below. You’ll be glad you did!

Autumn Side Salad: Apple Pomegranate Slaw


Apple, Pomegranate, Grape & Poppy Seed Slaw

Preparation 15 Serves 4     adjust servings

Remember to use firm apples for this recipe! Soft, overripe apples simply don't shred the same.


  • 1/4 tablespoons mayonnaise
  • 2 tablespoons lemon juice or apple cider vinegar
  • 2 tablespoons white sugar
  • 1/2 teaspoon pomegranate
  • 1/4 teaspoon sea salt
  • 2 green apples, shredded
  • 2 red apples, shredded
  • 1/2 cup red grapes
  • 1/2 cup purple grapes
  • 1/2 cup pomegranate arils


Whisk together all ingredients for the dressing. Set aside. In a large bowl, gently toss all salad ingredients together. Drizzle with dressing, tossing carefully until coated. Serve immediately and enjoy!

5-Ingredient Bacon Jalapeno Poppers

Preparation 10 Cook Time 20 Serves 12     adjust servings

The most simple and delicious Jalapeno Poppers you've ever eaten!


  • 1 (3 oz) package bacon bits
  • 1 (8 oz) package cream cheese, softened
  • 2 cups sharp cheddar
  • 1/2 teaspoon onion salt
  • 12 fresh jalapeños, halved and seeded
  • chopped cilantro for garnish (optional)


Preheat oven to 375 degrees. In a medium mixing bowl, stir together bacon bits, cream cheese, 1 c of cheese and onion salt. Fill jalapeño halves with cream cheese mixture. Transfer stuffed peppers into a nonstick baking pan. Sprinkle with remaining cheese. Bake for 20-25 minutes, or until cheese is bubbly and peppers are soft and tender. Remove and cool slightly before serving. Garnish with fresh chopped cilantro, if desired.

No-Bake Donut Ice Cream "Burger" Sandwiches

Donut Ice Cream Burgers

Preparation 30 Serves 4     adjust servings

Ice cream sandwiches with a twist. Cake donuts make these no-bake treats extra sweet.


  • 4 cake donuts (or 8 mini donuts), chocolate or vanilla
  • 1 pint vanilla ice cream, slightly softened
  • 3/4 cup sprinkles
  • 1/2 cup milk or semisweet chocolate chips
  • 3 tablespoons butter


Slice donuts through the center with a sharp knife. Top one half of donut with a large scoop of ice cream. Press the second donut half on top. Roll the edges of the donut in sprinkles. Place in freezer for 1-2 hours. In a medium microwave-safe mixing bowl, heat chocolate chips and butter together for 60-90 seconds, or until melted. Stir together until smooth. Spread on top of donuts. Return donuts to the freezer for 1 hour more. Serve and enjoy, or wrap donuts in plastic wrap or parchment and enjoy within 1 week.

Simple Spicy Wontons

Make your own Chinese New Year inspired wontons with this surprisingly simple recipe. Full of flavor and just a little heat, these wontons are surprisingly easy to make.

Though you can fry wontons in a pot or saucepan, the flared bottom and high wall construction of our sturdy carbon steel 12″ Wok makes it easy to evenly fry homemade wontons without spattering. Instead of fishing your wontons out of hot oil with metal tongs or (gasp!) a tiny fork, use a large wok strainer, which is designed to both lift and drain hot dumplings. Y

If you like dipping your wontons, look for prepared gyoza sauce in the Asian section of most grocery stores. Or add a little extra heat by mixing mayo, lime juice and Sriracha together for a quick, creamy dip.

Wonton 1 SM

Simple Spicy Wontons

Preparation 20 Cook Time 15 Serves 8     adjust servings

Homemade wontons, stuffed with spicy chicken, mushrooms and a kiss of Sriracha.


  • 2 cups sliced mushrooms
  • 1 tablespoon sesame or coconut oil
  • 1 egg
  • 1/4 pound spicy Italian ground chicken sausage, uncooked
  • 2 tablespoons sriracha sauce
  • 1 ½ cups coconut oil (for frying)
  • 16 wonton wrappers
  • 2 tablespoons diced scallions
  • ¼ cup cilantro, finely chopped
  • ¼ cup gyoza sauce


Place mushrooms in a food processor and pulse until very finely chopped. Heat mushrooms and sesame oil in a large skillet over medium-high heat. Cook just until softened, about 4-6 minutes. Transfer cooked mushroom mixture to a large bowl. Add egg, ground chicken sausage, and sriracha to the bowl, and mix with mushroom mixture until well combined. Heat coconut oil in a small pot over medium heat. While the coconut oil heats, begin preparing the wontons. To make the wontons, spoon ½ tablespoon of mushroom-sausage mixture into the center of 16 wonton wrappers. Moisten the tip of your finger with a little water and run it along all four edges of a wonton wrapper. Gather each of the four corners of the wonton together above the filling, then press the edges to secure them together. Repeat until all wontons have been wrapped. Test fry one wonton at first to ensure the filling is fully cooked. If not, turn down the stove heat slightly to allow the wontons to cook a little longer. Fry 3-4 wontons at a time in the hot oil until golden brown. Continue until all wontons are cooked. Garnish with scallions and cilantro. Serve with gyoza sauce, if desired.

Sweetheart Chocolate Cake

This delicious cake is made even more adorable when baked in a Sweet Creations Heart Shaped Cake Pan. The batter can also be cooked in to 9" cake pans (baking time for 9" cake pans will be 22-25 minutes). If you don't have buttermilk, feel free to add 1/2 cup of sour cream and 1 cup of milk to your cake mix.


  • 1 cup unsalted butter (2 sticks), cut into pieces, plus more for the pans
  • 4 large eggs
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 cups all-purpose flour, spooned and leveled
  • 4 ounces unsweetened chocolate, melted
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cup buttermilk
  • 1 teaspoon pure vanilla extract


Preheat oven to 325 degrees. Spray a Sweet Creations Heart Shaped Cake Pan with nonstick baking spray. Set aside. In a large bowl or stand mixer, beat together the butter, eggs, sugar, and brown sugar until very smooth and creamy. Add flour, melted unsweetened chocolate, cocoa powder, baking powder, and salt. Beat until well mixed. Add buttermilk and vanilla and beat just until mixed and creamy. Pour cake mix into prepared pan. Bake for 40-50 minutes, or until the center of the cake springs back when touched lightly. Remove and cool completely before frosting with your favorite buttercream frosting.

French Bread Lasagna--No Noodles Required!! Make your next batch of lasagna with French bread slices, instead of pasta noodles. The results are amazing!  

Recreate a comforting classic by serving this French Bread Lasagna for dinner. The swap of traditional lasagna noodles for day old french bread is a great way to use a leftover loaf yet create a dish as satisfying as the original.

This delicious recipe swaps in super-cheap stale sourdough for pasta noodles, switches ricotta for inexpensive small-curd cottage cheese and makes the most delicious homemade lasagna you’ve ever eaten. Day-old loaves of sourdough bread can be purchased from bakeries for less than 50-cents. And though it may seem odd, stale bread really does work best for this recipe. The dry slices soak up the sauce beautifully, so hit those budget bakery bins and stock up.

  • Quick Tip: Whenever I see day-old bread at the store, I like to purchase several loaves at once, tossing them in the freezer for safe-keeping until I’m ready to make this dish. It’s proven to be a conveniently simple (and affordable) way to always have ingredients on hand for this delicious meal.

French Bread Lasagna

Make a delicious lasagna bake--without the noodles! This recipe swaps in slices of French Bread, instead. The result is a warm and hearty meal that everyone will beg for!


  • 1 large loaf sourdough French bread, cut into ½” slices
  • 3 cups Marinara Sauce
  • 1 pound hot Italian sausage, crumbled and cooked
  • 2 cups small-curd cottage cheese
  • 2 cups Italian blend shredded cheese
  • 4 tablespoons butter, melted
  • 2 tablespoons grated parmesan
  • ½ teaspoon garlic salt
  • ¼ cup fresh basil or parsley, finely chopped


Preheat oven to 375 degrees. Place a layer of sourdough bread slices across the bottom of a 9x13” lasagna pan. Stir marinara and sausage crumbles together, then place them on top of the bread. Spread cottage cheese over the meat sauce. Sprinkle 1 ¾ cups of Italian cheese over the cottage cheese. Lay sourdough bread slices across the top of the cheese layer. Use a basting brush to spread butter on top of each slice. Sprinkle with parmesan and garlic salt. Bake, uncovered, in oven for 30-40 minutes, or just until the bread is golden brown and the layer of cheese beneath it is bubbly. Remove and cool for 15 minutes before slicing and serving
