Mint Oreo Icebox Cake –  Mint Oreo’s, chocolate pudding, and whipped cream come together in a super simple, delicious, and easy no bake dessert!

Summer is all about no bake desserts.  No one wants to turn on their oven and heat up the house.  Ice cream is an easy fix, but sometimes you want something more.  You want something with layers, texture, and something that is just downright addicting.  Enter the icebox cake.  Quick, easy, and will cure the biggest sweet tooth out there.

I am a sucker for mint and chocolate together.  And Mint Oreo’s are pretty much my kryptonite. So they seemed like the perfect cookie for the base of this icebox cake.  There is also a layer or chocolate pudding, and whipped cream!  I used homemade whipped cream for this, but if you don’t have the time the store bought frozen whipped topping will work great.  Just thaw it first.  Mint Oreo Icebox Cake seriously comes together in a matter of minutes; the worst part is waiting for it to set up in the fridge!

I made this icebox cake in the 13×9 inch Good Cook baking pan.  Everything fit perfectly, and it was super easy for my husband to bring it into work.  Because, let’s face it, if this Mint Oreo icebox cake was in my fridge all day, you can bet I would not have been able to stay out of it.

Preparation 15 Serves 16     adjust servings

Mint Oreo Icebox Cake - Mint Oreo's, chocolate pudding, and whipped cream come together in a super simple, delicious, and easy no bake dessert!

Ingredients

  • 2 packages Mint Oreos
  • 1 (3.4 oz) instant chocolate pudding mix
  • 2 1/2 cups milk, divided
  • 3/4 cup mini chocolate chips
  • 1 1/2 cups heavy cream
  • 1/3 cup sugar
  • 1 tsp vanilla extract

Instructions

In a large bowl whisk together chocolate pudding mix and 2 cups of milk. Once well blended and smooth set aside. Pour the remaining 1/2 cup of milk into a bowl. Dip the Oreo's into the milk, and place in a single layer, in the bottom of a 13x9 inch baking pan. Pour prepared chocolate pudding over the layer of cookies. Sprinkle the chocolate chips over the pudding mixture. Dip the remaining Oreo's into the milk to place in a single layer over the pudding. You should have a few cookies left. Set those aside. In a stand mixer, beat heavy cream until you have soft peaks. Slowly add sugar and vanilla extract. Beat until stiff peaks. Spread whipped cream over the layer of Oreo's. Crush the remaining Oreo's and sprinkle evenly over the top. Add additional chocolate chips if desired. Place in fridge for 4 hours until set.

Creative Dipped Cookies- Easy Ideas for Chocolate-Dipping Your Favorite Storebought Snacks

INGREDIENTS:

  • 12 crème sandwich cookies
  • 6 tablespoons peanut butter
  • 2/3 cups peanut butter chips
  • 2/3 cups milk chocolate chips 

Step 1

Spread ½ tablespoon of peanut butter on the bottom half each cookie, making a thin layer of peanut butter along the bottom and sides of one-half of each cookie. Set aside.

Step 2

In a medium, microwave-safe bowl, melt peanut butter chips by cooking in 30-second bursts in a microwave, stirring in between. The chips should get warm, but not hot to the touch.

Step 3

Melt the milk chocolate chips in a second microwave-safe dish.

Step 4

Once both types of chips are melted and smooth, spoon melted peanut butter chips into the bowl with melted milk chocolate chips and swirl just once or twice with a spoon.

Step 5

Spoon swirled chocolate mixture into each cookie cup, up to the easy-fill line marked on the mold.

Step 6

Working quickly, press the peanut-butter covered end of each cookie into each of the chocolate filled cookie cup. Place mold in a cool, dry place or in the refrigerator until chocolate is hardened, about 1 hour.

Step 7

Remove cookies from the mold. Share and enjoy!

Silver Dollar S'mores Pancakes

Turn your morning meal into a campfire-inspired breakfast that kids and grown-ups will adore.

Ingredients

  • 1 cup pancake mix (like Bisquick)
  • 1/2 cup graham cracker crumbs + 2 tablespoons
  • 1 1/4 cups milk
  • 1 egg
  • 1 cup marshmallow fluff
  • 12 small pieces milk chocolate bars

Instructions

In a Good Cook mixing bowl, whisk together pancake mix, 1/2 cup graham cracker crumbs, milk, and egg until smooth. Drop 2-4 tablespoons of batter onto a nonstick griddle heated to medium-high heat. Cook until batter begins to bubble, then flip. Cook second side until golden brown, then place cooked pancakes onto a cookie sheet. Spread marshmallow fluff between two pancakes, stacking them on top of each other. Press milk chocolate bar pieces between the layers. Top with marshmallows. Brown marshmallows under broiler until golden. Sprinkle with graham cracker crumbs and serve topped with maple syrup. Enjoy!

Ingredients

  • 1 medium-sized seedless watermelon, cut into 1/2'” cubes
  • 2 English Cucumbers, cut into ½” cubes
  • 1 large sweet Onions, finely diced

Easy Dessert! Perfect for Bake Sales: Pushup Pop Tiramisu

Tiramisu Push-Up Pops

Preparation 15 Cook Time 35 Serves 4     adjust servings

Quick and easy push-up pops made with a whippy, shortcut tiramisu. A quick and delicious dessert. Perfect for bake sales!

Ingredients

  • 1 cup white sugar
  • 1/2 cup butter
  • 4 egg whites
  • 2 teaspoons vanilla
  • 1 1/2 cups cake flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 1/2 cup espresso, prepared
  • 2 cups whipping cream
  • 1 (3.4 ounce) French vanilla powdered instant pudding mix
  • 1/2 teaspoon cocoa powder

Instructions

Preheat oven to 350 degrees. In a stand mixer, beat together sugar and butter until light and fluffy. Add eggs and beat until completely creamy. Add vanilla, flour, baking powder, and milk. Beat the batter just until all ingredients are well mixed in. Pour into a Sweet Creations 8x8 square pan, sprayed generously with baking spray. Bake for 30-40 minutes or just until the cake springs back when touched by a fork. Cool completely, then turn the cake out onto a wire cooling rack. Slice a very thin layer off the top of the cake, just enough to make the cake 1" tall. Use the Sweet Creations push-up pops to cut the cake into 8 small rounds. Once cut into circles, the cake rounds may stick to the inside of the push-up pop. Gently push the plunger up until the cake round pops out. In a stand beater or large bowl, beat the whipping cream just until soft peaks form. Sprinkle the French vanilla pudding mix over the whipping cream. Whip just until combined. Spoon into an icing bag fitted with a large star tip. To assemble push-up pops, dip the bottom half of each cake round into the espresso. Place one espresso-dipped cake round in the bottom of each push-up pop container. Pipe the vanilla custard cream on top of the cake round. Add a second espresso-dipped cake round on top of the cake. Finish off the push-up

Fresh watermelon is pureed into a simple, refreshing Agua Fresca

Ingredients

  • 6 pounds seedless watermelon, cubed
  • 2 cups water
  • 1/4 cup freshly squeezed lime juice
  • 2 tbsp agave or honey
  • Fresh mint for garnish

Instructions

Tool needed: Profreshionals Watermelon Tap 1. Slice a 2” piece from the top of a large, seedless watermelon. Discard top piece. Carve out the red melon meat from the inside of the watermelon. Place in a large bowl and set aside. 2. Prepare the melon for serving by ensuring it can stand upright. Slice a small portion from the bottom of the melon to make it more stable, if needed. Push the Good Cook watermelon tap through the outside rind until it goes through the center of the watermelon. For best results, tap the watermelon about 3 inches from the bottom of the melon. Set aside. 3. Blend watermelon meat and all other ingredients in a blender until pureed. Blend in small batches, if needed. Pour pureed ingredients into the prepared watermelon. Press the watermelon tap to dispense the drink into large glasses filled with ice. Enjoy!

Ingredients

  • 4 cups seedless watermelon, cubed
  • 1/2 cup sugar
  • 1 tablespoon fresh lime juice
  • Fresh mint (for garnish)

Instructions

In a blender, puree watermelon, sugar, and lime juice together. Pour into an airtight, freezer-safe container. Cover and freeze overnight. Just before serving, use a fork to shred the ice into flake. Serve in hollowed-out mini watermelon rinds. Garnish with mint, if desired.

If you’re trying to stay out of your kitchen, but are craving something sweet, this no-bake recipe for Watermelon Cupcakes is just the recipe you’ve been waiting for! Crisp slices of watermelon are cut into little rounds, then topped with a 3-ingredient white chocolate whipped frosting. That’s it! Perfect for parties, potlucks, and picnics, they’re a fun way to make a celebration treat without ever turning on your oven!

How to Make Watermelon Cupcakes 

Here’s your ingredient line-up! And look how simple it is. Super basic stuff here. But, sometimes the most simple things make for the most perfect, whippy frosting.
When these three ingredients are whisked together until fluffy, they make this perfect, easy-to-pipe frosting. Light and sweet, it tastes like a white-chocolate flavored fruit dip. If you don’t love white chocolate, feel free to swap in plain vanilla pudding mix, instead.

How to Make Watermelon Cupcakes

To make the cupcakes, simply use a 2-3″ round glass or biscuit cutter to cut watermelon slices into small circles. Since the slices of watermelon are so thick, a handled cutter wouldn’t pass all the way through the melon. But our open-topped cutters offer plenty of space for pressing through extra-thick slices. Turn off the oven and make yourself a batch of the cutest cupcakes ever! This easy-peasy recipe turns giant slices of watermelon into cute, crisp watermelon cupcakes. Topped with a creamy white chocolate

pudding whipped topping and a fresh cherry, this easy recipe is sure to become a summertime favorite!

Ingredients

  • 1 large seedless watermelon
  • 1 (16 ounce) container whipped topping
  • 1 (12 ounce) container whipped cream cheese
  • 1 (3.4 ounce) box white chocolate instant pudding mix
  • Fresh or maraschino cherries (for garnish)
  • Rainbow sprinkles
  • Special equipment: 2 ½” round Good Cook biscuit cutter

Instructions

In a large stand mixer, beat together whipped topping and cream cheese until smooth. Slowly add the instant pudding mix to the bowl and continue to whip until light and fluffy. Transfer this mixture into a large Sweet Creations icing bag, fitted with a large star tip. With a large knife, slice watermelon into 3” slices. With a Good Cook biscuit, cut each slice into 2 ½” rounds. Set each round piece in a cupcake liner, place on serving platter. Pipe whipped topping mixture onto each cupcake. Once all of your materials are gathered, place your watermelon on a large cookie sheet like the 18×13″ Good Cook AirPerfect Nonstick Half-Sheet Cake Pan. This extra-large, half sheet sized cake pan is the perfect way to catch any dripping juices from the watermelon, keeping your workspace cleanup extra simple. 

Step 1: How to Make a Watermelon Pig

To Start: Place your watermelon on the workspace and find its most stable position. You don’t want it rolling off of the table once you’ve cut it!

Use a watermelon knife to slice a quarter-sized piece  from the upper back half of your watermelon. Remove this portion from the main melon and use a knife to slice most of the meat from this piece, leaving just a thin layer of pink attached to the rind. Use your metal biscuit cutter, heart-shaped cookie cutter, and a small paring knife to create the following pieces from the rind:

To make the feet, simply cut four small rectangles, then use the biscuit cutter to slice a rounded edge from one side. You’ll also want to cut the pieces into wedges, so they can easily slide until your watermelon and stabilize it on the serving table.

TIP: To keep the nose extra-flat once placed on the pig, you may want to slice the green rind. Just be sure to leave enough of the firm, white portion to give the toothpicks something to grab onto.

With your pieces cut, it’s time to assemble! Simple push wooden toothpicks into the spots where you’d like each cut-out to sit, and press the nose, ears, and tail into place. Use toothpicks to secure the blueberry “eyes” and “snout” Push the wedges under the melon for the “hooves.” And use a melon baller to create bite-sized pieces from the rest of the melon. 

Serve with a shot glass full of toothpicks, and enjoy!

No-Cook Summer Lasagna

Keep your kitchen cool during the hot months of summer with this incredible simple no-bake lasagna. Lasagna noodles are boiled, then cooled (you can even make them the night before, as the temps drop!), topped with a creamy basil ricotta, then finished off with fresh zucchini and tomatoes. Casual enough for an evening at home, splendid enough for entertaining, this recipe is a must-try for summer evenings!

Ingredients

  • 8 lasagna noodles, broken in half crosswise
  • 1/2 cup ricotta cheese
  • 2 tablespoons fresh basil
  • 1 clove minced garlic, chopped
  • 3 tablespoons extra virgin olive oil, divided
  • 2 tablespoons white balsamic vinegar
  • 1 medium zucchini, thinly sliced
  • 2 cups cherry or grape tomatoes, halved
  • salt and pepper to taste

Instructions

Boil a pot of water on the stove and cook the lasagna noodles according to the package directions, drain and drizzle with a little olive oil to keep tender. In a medium bowl, combine the ricotta cheese, basil, garlic, 1 tablespoon of extra virgin olive oil. Salt and pepper to taste. Set aside. Toss the zucchini slices in the vinegar and remaining olive oil. Salt and pepper lightly. Place a lasagna noodle on each of four serving plates. Spoon some of the ricotta on top of the noodles, top with tomatoes and zucchini slices. Repeat the layering twice. Garnish with extra tomatoes and basil, if desired.

Bring back the fun of foil-pack cooking with this easy recipe! Perfect for tossing on the grill or cooking over an open-fire, prepare these foil packs ahead of time and take them along when you go camping! Though we’ve included the instructions for oven baking, grilling or campfire cooking is about the same—simply bake until the chicken is cooked through.

Ingredients

  • 4 red potatoes
  • 2 large chicken breasts, diced
  • 3/4 cup pesto
  • 1 cup grape or cherry tomatoes, diced
  • 4 sprigs fresh basil, if desired

Instructions

Preheat oven to 400 degrees. Microwave potatoes for 3-4 minutes, until crisp tender. Remove and cool slightly, then cut into bite-sized chunks. In a large bowl, mix together potatoes, chicken, and pesto until well-coated with sauce. Spoon the mixture evenly into the center of four large pieces of foil. Fold the ends of the foil toward the center filling, then roll the edges together to cover the food and create a packet. Place packets on a large baking sheet. Bake for 17-24 minutes, or just until the chicken is cooked through. Remove and cool slightly. Top with fresh diced tomatoes and garnish with basil, if desired.

Ever since getting pregnant with twins at the end of last year, my energy levels have dropped tremendously and I cannot even comprehend what it means to stand in the kitchen for more than 45 minutes at a time – and that’s on a good day!  I am all about the quick and easy meals, and especially now that the twins have arrived (10 weeks early) and we spend every minute we can at the hospital with them, I need fast meals to keep myself moving!

If you like Asian food, this one will certainly be a hit in your house.  We are big fans of Asian inspired dishes, and this one is no exception.  And although couscous is not generally served with Asian dishes, it complimented the Orange Chicken so well (not to mention it was all I had on hand!!).

You and your family will love this Skillet Orange Chicken that has some sweet and spicy flavors and is ready in under an hour!

This dish is versatile when it comes to the time to prepare it.  The chicken sits in a marinade, but you have the choice to let it marinate for a few minutes or up to the night before, so if you want the extra flavor and have the time the night before, this is perfect, or if you’re in a hurry and need to get it on the table stat, you’re covered there as well.

My favorite part of this dish is the sweet heat you get from the honey orange sauce with Sriracha.  I put quite a bit of Sriracha in the sauce, but you can feel free to tame it down, or even put more if 1 Tbsp isn’t considered “quite a bit” to you!  Either way, you and your family will be going crazy over this dish, and the best part is you only dirty a couple dishes!  I love it when you don’t have to spend just as much time cleaning up the kitchen as you do cooking the dish, don’t you??
