Growing up, I can always remember those nights when we would get home late from our sports outings, girl scouts or anything else that took up a long night.  We would come home and I could see how tired my mom was, clearly not wanting to make anything fancy for dinner.  On those nights, my dad would whip up some BLT’s and I honestly loved those dinner nights!

BLT’s have always been a favorite of mine.  It doesn’t hurt that I could literally eat sandwiches for every meal of everyday.  Sandwiches speak to me in a way that no other meal does.  Is that weird?  Never mind, don’t answer that.  Because sandwiches speak to my heart, BLT’s are naturally going to call my name.

This twist on the classic BLT will have you never wanting the original version again! Jalapeno BLT with Orange Aioli

 A few months ago, my husband took me out to eat lunch at a local restaurant here in Reno, NV that we had never eaten at before.  If you live in, or come visit Reno, you need to try out Sodo!  They have some really amazing food, and of course the one thing that caught my eye was none other than a BLT.  It was made with jalapeno bacon and orange aioli.  I was pretty skeptical at first, but I trusted my instinct and oh my goodness am I glad I did!  Was one of the best BLT’s I have ever had so of course I needed to recreate it!

I have no idea how they made the jalapeno bacon at Sodo, so I decided to go a different route with the jalapenos, but this version is just as amazing as the one I had at the restaurant.  You won’t be missing that the bacon isn’t jalapeno flavored because after I made the bacon, I sautéed the jalapenos in what?  Yeah that’s right – bacon grease!  Yes please times 1000!

And then rather than using plain mayonnaise on the BLT’s, I whipped up a simple orange aioli with garlic and orange zest, all combined with toasted sourdough bread, lettuce and tomatoes and you have yourself an amazing Jalapeno BLT with Orange Aioli!

Blood Orange Pound Cake

  • Prep Time: 15 minutes
  • Total Time: 15 minutes
  • Yield: 1


  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon coarse salt
  • 1/4 cup unsalted butter, room temperature
  • 1/2 cup sugar
  • Zest of 1 blood orange
  • 1 large egg, room temperature
  • 1/4 cup buttermilk, room temperature
  • Juice of 1 blood orange ( 2 Tablespoons)
  • Glaze
  • 1/4 cup powdered sugar
  • 1 1/2 Tablespoon blood orange juice


Preheat oven to 325 F. Grease a mini loaf pan.

Mix together the flour, baking powder, and salt. Set aside.

In a stand mixer, beat the butter until smooth, add in the zest and sugar, Mix until light and fluffy, about 3 minutes.

Add the egg to the mixer, and mix until blended. Scrape down the sides of the bowl and mix for a few more seconds.

Combine the buttermilk and the juice.

Add ½ of the flour mixture, mix until  just combined. Add the buttermilk, mix until just combined. Scrape down the sides of the bowl, then add the rest of the flour. Mix until just combined.

Pour batter into the prepared pan, and bake for 40-50 minutes, a toothpick should come out clean when poked into the center.

Let cake cool in the pan for 20 minutes, then gently remove from pan and place on a wire rack to cool completely.

To make the glaze, combine the juice and powdered sugar until smooth. Spoon over cake and enjoy.

Jalapeno Bacon Corn Dip
I think that appetizers are the best part of any get together. Well, maybe hanging out with friends and family is the best part. But if we are talking about food, I could eat appetizers instead of the main meal almost every day. At least one time per month we have a night of just appetizers at my house. It is always super relaxed, fun, and one of the favorite nights of the week.

Mexican corn dip is the perfect appetizer for any get together. Mexican flavors always seem to be a hit with everyone. Plus cheese, corn and bacon. Yeah, I thought you might agree. Everything about this corn dip sounds delicious. If you have fresh corn available, feel free to use it, but frozen corn works perfectly.

Jalapeno Bacon Corn Dip

Mexican corn dip is super easy to make. I charred the corn in a skillet on the stove, so it would have a little more flavor and texture. Then just mix with the cream cheese, sour cream, cheddar cheese, bacon and the spices. If you are in a hurry, you can just bake until it is bubbly and hot. But you can also make this ahead and just heat in the crock pot. Either way, it will be hot, creamy and perfection.

I brought this Mexican corn dip to a friend’s house last week. There were just 5 of us, and this entire batch of corn dip was gone by the time we left. Considering we also had a full meal, you can just guess how much everyone loved it. I went light on the jalapeno, because my 9 year old was going to be eating it. But if you like it spicy, add more! Serve with tortilla chips or corn chips for dipping, and you will have a happy crowd.
