  • 2 large, ripe tomatoes
  • 1 medium-sized ball fresh mozzarella cheese, sliced thin
  • 1/2 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • salt and pepper


With a sharp knife, gently cut tomatoes into several slices, with each slice going just 2/3 of the way through. Gently press mozzarella slices and fresh basil leaves intro each slice of the tomato. Drizzle with olive oil and vinegar. Salt and pepper, if desired. Serve and enjoy!

Crispy Asparagus and Prosciutto with Creamy Lemon Thyme Sauce

As we were preparing this Crispy Asparagus and Prosciutto, wrapping each asparagus spear and drizzling it with olive oil, my kids remained skeptical. We don’t like asparagus they kept saying, even as they helped me trim the ends of each piece. I reassured them that this asparagus recipe was different, knowing that a little prosciutto and a delicious lemon thyme sauce would transform this ordinary green vegetable. I kept my fingers crossed as I slid the pan into the oven. 

Sure enough, as soon as we pulled a sheet pan of this roasted asparagus wrapped in thin slices of crispy prosciutto, the kids were all in! I served them with a simple fresh herb flavored Creamy Lemon Thyme Sauce and I don’t think they said a word for the next fifteen minutes as they dipped and crunched and munched. Now that is some good cooking and another green vegetable victory for this mom!

Adults, on the other hand, shouldn’t be nearly so difficult to convince when it comes to a tasty, roasted side dish like this one. Before they are even out of the oven, the aroma alone will have everyone anxiously anticipating every crunchy bite.  These flavorful little asparagus bundles, however, are so good that although they may just be the appetizer, they really can steal the whole show. 

You can eat this prosciutto wrapped asparagus alone and it will taste really good. Adding the Lemon Thyme Sauce, however, really takes it up a notch. The sauce, with freshly squeezed lemon juice (this handy tool, the Citrus Squeezer, makes the job really easy and ensures you won’t find any seeds in your sauce!), and fresh thyme, adds a bright, creamy burst of flavor to the salty prosciutto and asparagus. It’s a perfect match!

To make this perfect spring appetizer, look for the best spears of asparagus. Good asparagus will be bright green in color with firm stalks and mostly closed tips. Before you begin, make sure you trim the woody ends off of each asparagus spear so only the most tender, tasty bites remain. Then, wrap them in prosciutto, per the recipe below, and get ready to eat your veggies!

French toast is one of my favorite breakfasts. It is a family tradition that we have it every year on Christmas. Usually thick cut French toast with maple syrup and sausage is our traditional breakfast. For whatever reason, we hardly ever have it the rest of the year. I used to make a couple slices for my son at least one a week, but even that is rare these days. His favorite way to eat French toast is topped with diced strawberries and maple syrup. Which got me to thinking about a fun twist I could put on French toast for him.

These French Toast Roll Ups are filled chocolate hazelnut spread and diced strawberries. Two of his favorite things in one little bite, I knew he would be thrilled! French toast roll ups are great for little kids, because they can eat them with their hands. Fun for them to just pick up and dunk in maple syrup. Plus you can fill them with just about anything that your family likes. Peanut butter? Go for it, it will be like peanut butter & jelly for breakfast! Want it savory? Use sausage links! So easy to switch up and make everyone happy.

French toast rolls ups are quick and easy to make. All you have to do is use a rolling pin to flatten slices of bread. Then spread chocolate hazelnut spread over each slice and sprinkle on a few strawberries. After you roll them up, just dip in the same egg/milk mixture you would when you make traditional French toast. Great for a special breakfast or even an after school snack. I made these for my son for his birthday breakfast. He was pretty excited, and now thinks they need to be a regular occurrence. Can’t say I blame him, anything with chocolate hazelnut spread has my heart.

Lemon Blueberry Pancakes

These lemon scented blueberry pancakes are so fluffy and light. They highlight what is best about the warmer months – fresh berries and lots of bright citrus. You can easily use raspberries or strawberries in place of the blueberries, but blueberries are my favorite in a pancake. I think that they hold up better to heat than delicate red berries.

The secret ingredient for these delectable pancakes is sour cream. It adds an extra layer of tang and a little lift to make them even fluffier.

I like to top mine with some uncooked blueberries, pure maple syrup, and extra butter.

Whisk together flour, sugar, baking powder, baking soda, and salt.

 In another bowl, whisk together sour cream, milk, lemon zest, lemon juice, melted butter, egg, and vanilla.

Gently fold in blueberries. (I like to reserve some uncooked ones for serving.)

Now it’s time to heat a skillet over medium heat. Melt a tablespoon of butter and pour about ¼ cup of batter onto hot griddle pan.

Yeah, it’s a thing. A totally delicious thing. 

One would think that Halloween would be the candy capital of the year, but in my house it’s this time of year.

We have egg hunts at the church, egg hunts at both grandmas’ houses and, of course, the Easter Bunny drops by and hides a few candy-filled eggs. So, yeah. We will be drowning in pastel colored candy any time now! And, to be perfectly honest, I can’t wait. Especially for the peanut butter eggs. Is anyone else just straight addicted to those guys? 

As much as I love to sit around and down handfuls of candy while watching Netflix, I try to be a little more responsible. And by responsible, I mean that I add handfuls of candy to other sugary things and call it dessert. Seems legit, right? Being a grown up is the best.

I went ahead and grabbed a bag of the mini Robin Eggs while I was at the grocery store this week and stuck them in the easiest ever fudge recipe.

The thing is, I’m not usually very good at fudge. It turns out soupy or it turns out grainy or it turns out like a rock. This fudge recipe, though? Nope. Can’t mess it up, even if you try! You have to give it a shot.

This easy white chocolate fudge is made from a base of powdered sugar, cream cheese, and melted white chocolate. You won’t even need a candy thermometer for this one! Don’t you love recipes that aren’t super fussy?

Once you’ve got your fudge all mixed up, you just chop up a handful of Robin Eggs and stir those right in. Spread it all out into a foil lined 8×8 baking dish, refrigerate for at least 4 hours, cut it into colorful little squares, and you have the most fun, Springiest treat ever! 

Feel free to swap in your favorite pastel colored candy here! You could even stir in some sprinkles if you really wanted to get fancy.
