Easy Homemade Fortune Cookies

The best part of making Fortune Cookies at home is that you get to make up all the fortunes yourself. Fate is in your hands, or at least in your kitchen.  It helps that these cookies are really yummy too!

Fortune Cookies are always fun but they aren’t always tasty. Most of the time when we have fortune cookies from our favorite restaurants we open them for the fun of reading our fortune and then toss the stale, cardboard-like cookie right in the trash. These Easy Homemade Fortune Cookies are fun to make and just as fun to eat. It’s even a great project for involving the kids in and they’ll like being able to make something that is a little more unique than your standard chocolate chip cookies. 

The trick to making great homemade fortune cookies is to work quickly, which is why some extra hands are, well, handy. The batter is simple and only takes a few minutes to pull together. After it has been refrigerated for an hour, making it easier to work with, you can get started and make those fortune cookies in just a few simple steps.

Step One:

Trace a few (I recommend two or three) three-inch circles on a sheet of parchment paper. The lid of a standard mason jar is just the right size. Secure the parchment paper on a large baking sheet with one or two pieces of masking tape.

Step Two:

Drop a teaspoon of batter into each circle and spread it around the circle with the back of a spoon as pictured above. Bake for approximately 4 or 5 minutes, as indicated in the recipe, or until the edges are golden brown.

Step Three:

Working very quickly, slide the cookie off the parchment paper, using a smooth flat spatula (like this one). Flip it over then, using the handle of a wooden spoon, place the fortune in the cookie and fold the cookie edges up around the spoon, pressing them tightly together as pictured below.

If the cookies start to cool and become hard to work with, stick them back in the oven for 30 seconds to 1 minute and they should soften back up so you can keep working.

Step Four:

Slide the wooden spoon out of the cookie then bend the cookie over the edge of a bowl or cup to form it into the classic fortune cookie shape. Let the cookies cool completely. They will harden up as they cool.

And there you have it! Just repeat until all of your batter is gone and you have a bowl full of fortune cookies to share.

How to Make Rainbow Deviled Eggs

Preparation 15 Serves 7     adjust servings

Dye your eggs, then devil them! This delicious recipe is a fun way to serve up Easter Eggs for potlucks and spring parties.

Ingredients

  • 6-7 Hardboiled Eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon dijon mustard
  • 4 cups water
  • 8 tablespoons vinegar
  • 15 drops food coloring (pink, green, blue, orange)
  • 1/2 teaspoon paprika
  • salt and pepper to taste

Instructions

Peel each hardboiled egg. Slice in half with a Good Cook paring knife. Empty the egg yolks into a mixing bowl. Add 1/4 cup mayo and 1 teaspoon dijon to the bowl. Whisk together until whippy and smooth. Set aside. In four small bowls, mix together 1 cup of water with 2 tablespoons of vinegar and 15 drops of food coloring. Dip the egg whites into each bowl of food coloring. Allow eggs to soak until desired color is reached. Remove from food coloring and dry off with a clean paper towel. Pipe yolk filling into the center of each egg. Sprinkle with paprika, salt, and pepper. Refrigerate until ready to serve.

Easy Homemade Hot Cross Buns

Ingredients

  • FOR THE ROLLS
  • 1 (1.25 ounce) package active dry yeast
  • 1 cup very warm water
  • 4 - 5 cups flour
  • 1/3 cup sugar
  • 1 teaspoon cinnamon
  • 3/4 teaspoon cardamom
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cloves
  • 1 teaspoon salt
  • 4 tablespoons butter
  • zest of 1 orange
  • 3/4 cup dried currants
  • THE GLAZE
  • 1 egg, well beaten with 1 tablespoon milk
  • FOR THE FROSTING
  • 1 stick butter, softened
  • 4 cups powdered sugar
  • 24 tablespoons milk

Instructions

In a large bowl, whisk together water, yeast, and sugar. Let sit for 5-10 minutes until foamy. Using a whisk, mix in half the flour, the salt, spices, sugar, butter, and orange zest. With a wooden spoon, stir the mixture and add enough flour to make the mixture soft and pliable (but not sticky). Add the currants, then knead the dough until elastic. Place in a large, greased bowl. Cover with a towel and allow to rise in a warm, dry location for about 1 hour, or until double in bulk.

Separate dough into 18-24 small pieces. Roll into balls and place on a parchment-lined baking sheet. Use a pastry brush to brush the top of each roll with egg & milk mixture. Allow rolls to rise until double in bulk, about 45 minutes.

Preheat oven to 350 degrees. Bake rolls in preheated oven for 16-22 minutes, or until light golden brown. Remove and cool completely before frosting.

For frosting: beat together butter, powdered sugar, and milk. Place in a pastry bag. Pipe in a cross over the top of each cooled bun. Serve and enjoy!

These ham and cheese quiche cups are perfect for a quick healthy on the go breakfast!

I’ve been on a mission lately! A mission to feed my kids healthy, protein packed, homemade goodness for breakfast.

You see, we’ve been a cold cereal family for a long time and the guilt has finally gotten to be too much for me. I cook for a living! I should be providing my kids something warm and nourishing in the morning, right? 

Well, they mostly disagree, because they love that sugary cereal. Then I came at them with these little handheld cups of ham, cheese, potatoes, and eggs and they saw the light! 

Breakfast doesn’t have to take forever to make and it can be fun to eat. 

These ham and cheese quiche cups are perfect for a quick healthy on the go breakfast!

I made a dozen of these quiche cups for our family and just stored the leftovers in a dish in the fridge. The kids have been popping them in the microwave for a quick breakfast each morning, but I’m noticing that they’re even warming them up for an afternoon snack.

They really are filling with all of the protein from the ham and eggs, the carbs in the crispy potato crust will give them energy to start their day, and the cheese just brings it all together and adds a great flavor! 

We used the Good Cook muffin tin for these and, while I did spray the tin down with some non-stick cooking spray, I am happy to report that none of the quiche cups stuck in the muffin wells! Success!

We thought these were much better than a full sized quiche, because they’re portable and every kid (and, yeah, me!) loves eating with their hands. Who has time for utensils on a busy morning? Not to mention, less dishes is always a winning factor! 

Please don’t be limited to the ham and cheese variation you’re seeing here, though! Get creative and have a little fun with these guys. Bacon and sausage are obvious choices, but what about leftover taco meat? Add in some pepper jack cheese and a little onion and you could have a fiesta for breakfast! 

You can skip the meat and load these up with veggies as well. Spinach, bell peppers, leftover green beans, really anything goes!

Ham & Cheese Mini Quiche Cups

Preparation 10 Cook Time 15

These easy quiche cups are perfect for a grab and go breakfast!

Ingredients

  • 2 cups refrigerated hash browns
  • 1 tablespoon flour
  • 1/4 cup sweet onion
  • 1/2 cup diced ham
  • 1 tablespoon olive oil
  • 6 eggs
  • 1/4 cup milk
  • 1/2 cup cheddar cheese
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Instructions

Preheat oven to 375ºF. Spray a 12-cup muffin tin liberally with non-stick cooking spray. In a medium bowl, combine the hash browns and flour. Press the hash browns evenly between 10 muffin wells to form the crust. Bake for 15 minutes or until the edges are beginning to brown. While the hash browns are baking, dice the onion. Heat a large nonstick skillet over medium heat. Add the olive oil. When the oil is hot, add the onions and cook 5 minutes, stirring often, until softened. In a medium bowl, beat together the eggs and milk until frothy. Stir in ham and cheese, salt and pepper. Add in the onion. Remove the hash browns from the oven and pour the egg mixture evenly into each muffin well lined with hash browns. Return to the oven for 15-17 minutes or until the quiche has set and the top is still a little moist looking. Run a butter knife around the edges of each quiche to loosen and remove to a plate. Serve warm or at room temperature.

 No-Rise Almond Breakfast Danish

If you like Coffee Cake, Biscotti, or a bite of almond danish with your morning cup o’ Joe, then you will absolutely love this recipe for a no-yeast, no-rise Almond Danish. Supremely simple and made with the most basic of ingredients (flour, butter, sugar, and eggs), this recipe can be prepped in just 10 minutes. We love serving it as a breakfast, but it also makes a delicious brunch offering. You can make it the night before and have it ready to go. The danish isn’t overly sweet and the eggs in the recipe make it quite filling. So you can serve a little slice or two anytime of day, whether first thing in the morning or as a little midnight snack.

This recipe comes from my boyfriend’s mama. It’s been passed down as a Christmas Morning breakfast from their Scandinavian family and was the first cooking request I recieved from the Boyfriend. His sweetest memories of Christmas were waking up and stealing big slices of this danish. And once I made it for my kids, I understood why. It’s absolutely scrumptious! Better yet, it’s so incredibly simple to make! Which makes it a mother’s best friend. Quick, easy, and delicous. We need more recipes like this in our life!

 I am pretty sure I could live on snacks. Sweet or savory, it doesn’t really matter. I can not go through the day without having snacks! What is your favorite snack? I grew up with apple slices and peanut butter, and to this day it is still one of my favorites. But instead of just plain peanut butter, I decided to completely up the game.   Peanut butter, cream cheese, whipped topping, and Butterfingers take snacking to an entirely different level.  Creamy Peanut Butter Butterfinger Dip is sure to be one of your new favorites!

This dip is probably more of a dessert, but really any excuse to eat this will do. Peanut butter Butterfinger dip is delicious with slices of apples, graham crackers, animal crackers, and Nilla wafers. I may have eaten some straight off a spoon, but I will never admit it! It also works well on top of brownies, but won’t tell you know I know that. It took all of my will power to not eat it all. There is just something about peanut butter and chocolate together! Especially in a creamy and fluffy dip.

Peanut Butter Butterfinger Dip - super easy, creamy peanut butter dip with chunks of Butterfinger.  Great for dipping apples, nilla wafers or even just from a spoon.

Peanut butter Butterfinger dip comes together in just 5 minutes. Just cream together peanut butter and cream cheese, and then fold in the whipped topping and crushed candy. I left my Butterfingers in larger chunks, because I wanted to be able to really tell they were in there. But you can finely crush them, if that is more your style. This dip is great to have in the fridge for after school snacks, or when unexpected guests show up.

Meet Irish Cream Cheesecake Brownie Bars! Sometimes you want a brownie. And sometimes you want a piece of cheesecake. Sometimes it just makes sense to combine the two! 

These Irish Cream Cheesecake Brownie Bars are decadent, chocolatey, and have just the slightest kick from Irish Cream. These are going to be a hit at your St. Patrick’s Day get together. These are a perfect make ahead dessert too. They get better and better in the fridge. 

You can take a knife and drag it through the batters to make swirls, but I like the way two distinct layers look. Resist the urge to cut into these right away. The flavors develop overnight in the fridge and when chilled, are much easier to cut into clean squares.
