There are times when you need to make an impressive dessert and don’t have a ton of time. But what you do have working in your favor are a few pints of perfectly ripe, beautiful berries sitting on the counter. Pair it with some angel food cake, a jar of lemon curd, and whipped cream and you have a drool-worthy dessert in literally minutes. It tastes fresh and light and is a sweet way to end a meal. (Admittedly, I have eaten it for breakfast too, it tastes good any time of day.) 

This is one of my go-to desserts in the spring and summer because not only is it gorgeous to look at, it is no bake. I love not having to heat up my oven if I don’t have to. It uses just a few ingredients that I always have stocked in my pantry and fridge. Before you know it, you’ve knocked out dessert that people will beg to have the recipe for. 

Super Simple Lemon Berry Trifles

The beauty of a trifle is that you can use whatever ingredients you have and make it your own. If peaches look good, use them. Make it to suit your taste. You can make them a few hours ahead and keep them in the fridge until you are ready to serve them. They actually taste better the longer they chill. Sometimes I make one big trifle and sometimes I make individual sized ones. I love to serve these in small mason jars. Perfect picnic food. A cute way to serve them is in a tub filled with ice. They chill out and your guests can grab and go. The lemon cream is also a great little recipe to have in your back pocket. It is amazing on a warm scone.

Instead of serving tender, juicy sliders between buns, this recipe shakes things up a bit and serves them between soft slices of sweet potato. The result is a flavor explosion! We’ve added havarti, bacon, and jalapeno to the top of our burgers. Then serve it all on a bed of peppery arugula with a creamy lemon mayonnaise. Sound too gourmet to make at home? No way! This recipe takes just a few minutes of prep time–and most of that prep time is done with a microwave or in a stovetop skillet. Jalapeno Bacon Sweet Potato Sliders

Toss the bun and add extra flavor to mealtimes and grilling season with this quick and easy recipe for Sweet Potato sliders.

  • Yield: 4


  • 1 large sweet potato
  • 2 tablespoon coconut oil
  • 1 pound ground beef
  • 4 slices bacon, cooked
  • 4 slices havarti, swiss or pepperjack cheese
  • 2 jalapenos, sliced thin
  • 2 cups arugula
  • 1/3 cup mayonnaise
  • 1/2 lemon, freshly squeezed
  • 1/4 teaspoon paprika
  • salt and pepper to taste


Microwave sweet potato until crisp-tender, about 6-9 minutes. Remove and allow to cool. Slice into 8 slices which are 1/4-1/2″ thick. Melt coconut oil in a skillet over medium-high heat. Form ground beef into 8 small slider patties. Salt and pepper generously, then cook in the melted coconut oil until browned on the outside, and nearly cooked through. Place jalapenos, bacon, and cheese on top of each patty. Cover the skillet with a lid and cook until cheese is melted. Transfer sliders to a serving plate. Cook sweet potatoes in skillet until golden around the edges. Assemble sliders by placing patties and arugula on top of one slide of sweet potato. In a small bowl, whisk together mayo, lemon juice, and paprika. Drizzle over each slider before topping with the second slice of sweet potato. Serve immediately and enjoy!
