PERFECT PIZZA WITH A PERSONAL TOUCH
Make delicious pizza at home with tools from Good Cook


RANCHO CUCAMONGA, CA (Fall, 2003) — Pizza is truly one of America’s favorite foods. With more than 3 billion pies consumed annually in the U.S., pizza has achieved unmatched popularity. Rolling the Perfect Crust
Whether using store-bought dough, or homemade the first step in pizza baking is rolling out the crust. Lightly dust your work surface with flour or cornmeal to keep the dough from sticking. Good Cook recommends using a wood surface, such as a butcher’s block or cutting board prepare the dough. Shape the pizza dough into a ball and using a rolling pin, roll the dough to the size and thickness you desire.

Meanwhile, preheat the oven to 450 degrees Fahrenheit (or, if using a store-bought crust, follow package directions). To imitate the environment of traditional pizza ovens and achieve even heating and a crisp crust, use a pizza stone, which is specially designed for such an effect. For an even crispier crust, use a perforated metal pizza baking pan.

Top it Off
When making a pizza at home, the topping possibilities are almost limitless! Personalize your pie with exotic toppings such as pears and Gorgonzola cheese, or choose something as traditional as pepperoni and sausage. Use your imagination and have some fun.

First, place rolled pizza dough on a pizza stone or metal pan. Brush the entire crust with a light coating of olive oil, using a pastry/basting brush. This will ensure the crust bakes to a golden, crispy consistency. Next top the pizza with your chosen toppings, starting with sauces and any larger, chunkier toppings such as meats, fruits and vegetables. Finally, add a thick, even layer of cheese. For best results, buy cheeses in bulk form and grate evenly onto the pizza. Bulk cheeses tend to melt more evenly then store-bought pre-shredded cheese.

Bake to Perfection
Once the oven is hot and the pizza is topped, place the pie in the oven. Close the oven and let the pizza bake to a golden brown approximately 25-30 minutes or according to store-bought dough’s directions. Once the pizza is finished cooking, it will be medium to dark brown in color, and the cheese will have melted and caramelized to a delicious golden hue. Carefully remove the pizza and let it cool. Once the pizza has cooled slightly, slice evenly using a pizza cutter, serve and enjoy.

Good Cook's Basic Pizza Dough
1 (.25 ounce) package active dry yeast
1 cup warm water (110 degrees F/45 degrees C)
2 cups bread flour
2 tablespoons olive oil
1 teaspoon salt
2 teaspoons white sugar

In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes. In a large bowl, combine 2 cups bread flour, olive oil, salt, white sugar and the yeast mixture; stir well to combine. Using a wooden spoon, beat well until a stiff dough has formed. Cover the dough and let rise until doubled in volume, about 30 minutes. Turn dough out onto a well-floured surface and form dough into a round, using a wooden rolling pin to roll into a 12-inch pizza crust.

Good Cook Apple & Gorgonzola Cheese Pizza
1/2 cup cream cheese
1 (12 inch) prepared pizza crust
3 large apples
4 ounces Gorgonzola Cheese, crumbled
4 ounces Mozzarella Cheese
1/2 cup chopped walnuts (optional)

Preheat oven to 450 degrees Fahrenheit. Peel and core apples using a vegetable peeler. Cut apples into thin, evenly sized slices. Spread cream cheese over pizza crust and arrange apple slices to cover crust. Using a cheese grater, shred mozzarella cheese evenly on top of the pizza. Crumble Gorgonzola on top of the mozzarella. Sprinkle walnuts over all, if desired. Bake in preheated oven until golden brown, approximately 25-30 minutes. Allow to cool 1-2 minutes before cutting. Serves four.
